Food for Life – Flesh Food

What a spring, and now officially it is summer! How very eager we all are to see what this brings forth! Out here in the sunny west it has proved very strange indeed. No rain when it should have stormed and then buckets full when everyone was relaxed and thought that all we had to do was look forward to water rationing! So for all of you wherever you are in this old world, we wish you well, and hope with all our hearts that you are looking for Jesus’ soon return when we can say goodbye to all these unpredictable seasons.

This month we will be looking at a passage from Ministry of Healing, 315–317.

“The moral evils of a flesh diet are not less marked than are the physical ills. Flesh food is injurious to health, and whatever affects the body has a corresponding effect on the mind and the soul. Think of the cruelty to animals that meat eating involves, and its effect on those who inflict and those who behold it. How it destroys the tenderness with which we should regard these creatures of God!

“The intelligence displayed by many dumb animals approaches so closely to human intelligence that it is a mystery. The animals see and hear and love and fear and suffer. They use their organs far more faithfully than many human beings use theirs. They manifest sympathy and tenderness toward their companions in suffering. Many animals show an affection for those who have charge of them, far superior to the affection shown by some of the human race. They form attachments for man which are not broken without great suffering to them.

“What man with a human heart, who has ever cared for domestic animals, could look into their eyes, so full of confidence and affection, and willingly give them over to the butcher’s knife? How could he devour their flesh as a sweet morsel?

“It is a mistake to suppose that muscular strength depends on the use of animal food. The needs of the system can be better supplied, and more vigorous health can be enjoyed, without its use. The grains, with fruits, nuts, and vegetables, contain all the nutritive properties necessary to make good blood. These elements are not so well or so fully supplied by a flesh diet. Had the use of flesh been essential to health and strength, animal food would have been included in the diet appointed man in the beginning.

“When the use of flesh food is discontinued, there is often a sense of weakness, a lack of vigor. Many urge this as evidence that flesh food is essential; but it is because foods of this class are stimulating, because they fever the blood and excite the nerves, that they are so missed. Some will find it as difficult to leave off flesh eating as it is for the drunkard to give up his dram; but they will be the better for the change.

“When flesh food is discarded, its place should be supplied with a variety of grains, nuts, vegetables, and fruits that will be both nourishing and appetizing. This is especially necessary in the case of those who are weak or who are taxed with continuous labor. In some countries where poverty abounds, flesh is the cheapest food. Under these circumstances the change will be made with greater difficulty; but it can be effected.”

Food For Life – Supplying the Place of Meat

The place of meat should be supplied with wholesome foods that are inexpensive. In this matter very much depends on the cook. With care and skill, dishes may be prepared that will be both nutritious and appetizing, and will, to a great degree, take the place of flesh food.

“In all cases educate the conscience, enlist the will, supply good, wholesome food, and the change will be readily made, and the demand for flesh will soon cease.

“Is it not time that all should aim to dispense with flesh foods? How can those who are seeking to become pure, refined, and holy, that they may have the companionship of heavenly angels, continue to use as food anything that has so harmful an effect on soul and body? How can they take the life of God’s creatures that they may consume the flesh as a luxury? Let them, rather, return to the wholesome and delicious food given to man in the beginning, and themselves practice, and teach their children to practice, mercy toward the dumb creatures that God has made and has placed under our dominion.

“Not all who profess to believe in dietetic reform are really reformers. With many persons the reform consists merely in discarding certain unwholesome foods. They do not understand clearly the principles of health, and their tables, still loaded with harmful dainties, are far from being an example of Christian temperance and moderation.

“Another class, in their desire to set a right example, go to the opposite extreme. Some are unable to obtain the most desirable foods, and, instead of using such things as would best supply the lack, they adopt an impoverished diet. Their food does not supply the elements needed to make good blood. Their health suffers, their usefulness is impaired, and their example tells against, rather than in favor of, reform in diet.

“Others think that since health requires a simple diet, there need be little care in the selection or the preparation of food. Some restrict themselves to a very meager diet, not having sufficient variety to supply the needs of the system, and they suffer in consequence.

“Those who have but a partial understanding of the principles of reform are often the most rigid, not only in carrying out their views themselves, but in urging them on their families and their neighbors. The effect of their mistaken reforms, as seen in their own ill-health, and their efforts to force their views upon others, give many a false idea of dietetic reform, and lead them to reject it altogether.

“Those who understand the laws of health and who are governed by principle, will shun the extremes, both of indulgence and of restriction. Their diet is chosen, not for the mere gratification of appetite, but for the upbuilding of the body. They seek to preserve every power in the best condition for highest service to God and man. The appetite is under the control of reason and conscience, and they are rewarded with health of body and mind. While they do not urge their views offensively upon others, their example is a testimony in favor of right principles. These persons have a wide influence for good.” The Ministry of Healing, 317–319.

Inspiration Counsels Against Extremes in Diet

What a year this has been so far! Truly the Lord is coming soon, to take His faithful ones to Gloryland! Will you be there? I hope to be there to meet my Lord and Savior in the skies and reign with Him throughout eternity. This month, we will continue to look at the chapter in The Ministry of Healing called “Extremes in Diet.”

“God is not honored when the body is neglected or abused and is thus unfitted for His service. To care for the body by providing for it food that is relishable and strengthening is one of the first duties of the householder. It is far better to have less expensive clothing and furniture than to stint the supply of food.

“Some householders stint the family table in order to provide expensive entertainment for visitors. This is unwise. In the entertainment of guests there should be greater simplicity. Let the needs of the family have first attention.

“Unwise economy and artificial customs often prevent the exercise of hospitality where it is needed and would be a blessing. The regular supply of food for our tables should be such that the unexpected guest can be made welcome without burdening the housewife to make extra preparation.

“All should learn what to eat and how to cook it. Men, as well as women, need to understand the simple, healthful preparation of food. Their business often calls them where they cannot obtain wholesome food; then, if they have a knowledge of cookery, they can use it to good purpose.

“Carefully consider your diet. Study from cause to effect. Cultivate self-control. Keep appetite under the control of reason. Never abuse the stomach by overeating, but do not deprive yourself of the wholesome, palatable food that health demands.

“The narrow ideas of some would-be health reformers have been a great injury to the cause of hygiene. Hygienists should remember that dietetic reform will be judged, to a great degree, by the provision they make for their tables; and instead of taking a course that will bring discredit upon it, they should so exemplify its principles as to commend them to candid minds. There is a large class who will oppose any reform movement, however reasonable, if it places a restriction on the appetite. They consult taste instead of reason or the laws of health. By this class, all who leave the beaten track of custom and advocate reform will be accounted radical, no matter how consistent their course. That these persons may have no ground for criticism, hygienists should not try to see how different they can be from others, but should come as near to them as possible without the sacrifice of principle.

“When those who advocate hygienic reform go to extremes, it is no wonder that many who regard these persons as representing health principles reject the reform altogether. These extremes frequently do more harm in a short time than could be undone by a lifetime of consistent living.

“Hygienic reform is based upon principles that are broad and far-reaching, and we should not belittle it by narrow views and practices. But no one should permit opposition or ridicule, or a desire to please or influence others, to turn him from true principles, or cause him lightly to regard them. Those who are governed by principle will be firm and decided in standing for the right; yet in all their associations they will manifest a generous, Christlike spirit and true moderation.” The Ministry of Healing, 322–324.

Recipe – Creole Corn

2 cups fresh or frozen corn

¼ cup chopped onion

¼ cup sliced green pepper

1 cup strained canned tomatoes

1/8 tsp. dill weed

Salt to taste

Cook corn, onion and green pepper in a non-stick pan over low heat until tender. A small amount of water may be added if necessary to prevent sticking. Add remaining ingredients and heat thoroughly.

The Character of Daniel

It is through the Bible that we learn about God and His work for us and through us. In 1 Corinthians 10:11, we read that the stories of the Bible were recorded as examples for us upon whom the ends of the world are come. One is the stories contained in the book of Daniel. God’s grace and salvation are seen throughout the entire book of Daniel. In the prophetic portion of the book, the history of the world is pictured in dreams and symbols, but equally significant for us are the lessons that we can learn from the development of Daniel’s character, himself. We are told that “The case of Daniel may be studied with profit by all who desire perfection of character.” Signs of the Times, November 5, 1896. With this counsel in mind, let us look at the character traits of Daniel.

In the first chapter of Daniel, seven character traits are described as well as four rewards which were granted to Daniel because of his faithfulness. Let’s see what we can learn by studying the character of Daniel in relationship to our preparation for the soon appearing of Christ.

Daniel 1:1–2 tells us of the captivity of the children of Israel by Nebuchadnezzar, king of Babylon. This was prophesied by God’s prophet in Isaiah 39:3–7. As we research this event in history we learn that over 18,000 people were carried away to Babylon. (See 2 Kings 24:14–16.) Of these 18,000, God was able to chose four as His special messengers to this lost nation of Babylon. Thus the first character trait, seen in Daniel 1:3–7, is that he was chosen. These four young men were chosen because there was something different about their lives and character than the rest of the Israelites. It will be the same with the people of God at the end of the earth. They are a special chosen people who have as their purpose the proclamation of the Three Angels’ Messages of Revelation 14. Just as Daniel chose to follow God, regardless of the cost, so we must make that decision if we will be among the chosen of God.

The second and third character traits can be summarized by the words conviction and commitment. Daniel 1:8 says that “he purposed in his heart the he would not defile himself with the portion of the king’s meat, nor with the wine which he drank.” As a child, Daniel had been raised to know God’s health laws and in this foreign land he had an opportunity to eat and drink as he wanted. So the offer of the King to eat of his meat and wine was a test of Daniel’s personal convictions in the areas of diet, health, and obedience to God’s claims in all areas of his life. Before he took any public stand in regard to his diet, he determined in his own heart that what he had been taught had been truth and he was convicted of his need to remain faithful to God in this area. His next step was to make a public statement of his conviction not to defile himself. What a commitment this was to truth. When Daniel requested that he might not defile himself with the kings diet, the prince of the eunuchs was fearful that the young men would look worse than those who had the privilege of eating the King’s food. He was concerned that allowing the Hebrews to eat and drink according to their custom would make them less fit than the rest of the young men and could thereby endanger his own life.

We might ask ourselves, “Was the matter of diet really important enough to risk their lives?” This is what Ellen White tells us about their decision in regard to diet. “What if Daniel and his companions had made a compromise with those heathen officers and had yielded to the pressure of the occasion by eating and drinking as was customary with the Babylonians? That single instance of departure from principle would have weakened their sense of right and their abhorrence of wrong.” Fundamentals of Education, 81. This makes it extremely clear that our choices in dietary matters can weaken or strengthen our sense of wrong. There is a strong temptation to eat as we desire or to eat according to the customs around us. We do this because it is easier and does not hurt feelings, but the situation of Daniel had much more at stake than hurting feelings. It could have cost him and the prince of the eunuchs their lives. It is therefore clear that we should not conform our dietary decisions or any other of God’s commands to what is customary in the surroundings we find ourselves. Another statement from The Great Controversy makes a similar observation about putting ourselves on common ground with the world. From page 509 we read, “Conformity to worldly customs converts the church to the world, it never converts the world to Christ. Familiarity with sin will inevitably cause it to appear less repulsive. He who chooses to associate with the servants of Satan will soon cease to fear their master. When in the way of duty we are brought into trial, as was Daniel in the Kings court, we may be sure that God will protect us; but if we place ourselves under temptation we shall fall sooner or latter.”

Just as Christ struggled with appetite in the wilderness, so must we. If we are to gain perfection in character, we must overcome in this area of our life. Overcoming appetite is so crucial that Christ fasted for forty days in order to overcome. Through His strength we may be victors not only of appetite, but we may have the moral power to be victorious over every other temptation of Satan. Please note the following, found in Counsels on Diet and Foods, 59: “The controlling power of appetite will prove the ruin of thousands, when, if they had conquered on this point, they would have had moral power to gain the victory over every other temptation of Satan. But those who are slaves to appetite will fail in perfecting Christian character. The continual transgression of man for six thousand years had brought sickness, pain, and death as its fruits. And as we near the close of time, Satan’s temptation to indulge appetite will be more powerful and more difficult to overcome.” Just as Daniel overcame on the point of appetite, so must we, if we are going to stand in these final days as God’s lighthouse to the world.

So, what would become of Daniel’s request to the prince of the eunuchs? Why would the prince of the eunuchs even consider Daniel’s request if it might cost him his life? Part of the reason the prince considered Daniel’s request was because of his fourth character trait, courtesy. Daniel 1:9 tells us that, “God had brought Daniel into favor and tender love with the prince of the eunuchs.” Daniel had indeed gained the respect of the Babylonians, partly because of the courteous and respectful way in which he approached them. He had been taken from his home and was a captive in a strange land, but his courtesy was a daily witness to his captors. In Sanctified Life, 20, 21 we read: “Daniel possessed the grace of genuine meekness. He was true, firm, and noble. He sought to live in peace with all while he was unbending as the lofty cedar whenever principle was involved. In everything that did not come in collision with his allegiance to God, he was respectful and obedient to those who had authority over him, but he had so high a sense of the claims of God that the requirements of earthly rulers were held subordinate. The record of his noble, self denying life is an encouragement to our common humanity. From it we may gather strength to nobly resist temptation and firmly, and in the grace of meekness, stand for the right under the severest trial.”

Daniel’s ability to stand firm based on principle was a result of his fifth character trait, that of confidence in God’s Word. Daniel risked his very life because he had faith in God’s Word. The Bible is full of examples of men and women who have risked everything because of their belief in God’s Word. We may not have been in that position in the past, but each of us may face the same decision Daniel did, some time in the near future. Are we willing to risk all to follow God’s Word? The promise of protection is sure. (See 1 John 4:4, 1 Samuel 2:30, and 2 Peter 1:3–10.)

Because of Daniel’s courtesy and firm stand for principle the head eunuch decided to allow Daniel to have a ten day test of the diet he proposed. (See Daniel 1:10–16.) With confidence in God’s Word, Daniel, for not just the next ten days, but throughout his entire stay in Babylon, displayed his sixth and seventh character traits, courage and consistency. It takes true courage and strength of character, not just a momentary flash of glory, to stand for a lifetime, faithful to our God. Daniel 1:21 says that Daniel “continued.” This kind of courage and consistency, only God can give. Once we take a stand for God, we must, with His help, display consistency in our walk in the truth. Without this our witness will be weak if not even harmful. A quote from Prophets and Kings, 487, 488, brings this home to our heart. It says: “Strong, subtle influences may bind them to the world; but the Lord is able to render futile every agency that works for the defeat of His chosen ones; in His strength they may overcome every temptation, conquer every difficulty. There is need of men who like Daniel will do and dare for the cause of right. Pure hearts, strong hands, fearless courage are needed; for the warfare between vice and virtue calls for ceaseless vigilance.” We must, in our warfare against appetite and every other sin that the Devil brings our way, “stand like Daniel, that faithful statesmen, a man who no temptation could corrupt.” Christ’s Object Lessons, 332.

God never leaves the faithfulness of His children unrewarded. As a result of his obedience, in all areas to God, Daniel experienced rewards that were not shared by the other captives. First, Daniel experienced in his physical being a special impact. He was healthier than those who ate the King’s food. (See Daniel 1:15–16.) His countenance glowed with life and vitality and he had a degree of health that was not experienced by his fellow captives. We too can find health beyond that seen in the world when we follow God’s health laws.

Daniel also experienced an intelligence that was not common among the people around him. (See Daniel 1:17–20.) As we develop our spiritual character and are faithful to follow His requirements for health, God can also bless us with skill in learning. From the Review and Herald, March 22, 1898, this vital link between our spiritual nature and our mental capabilities is emphasized. “As in the case of Daniel, in exact proportion as the spiritual character is developed, the intellectual capabilities are increased.” Daniel 1:17 also states that Daniel had special insight into the meaning of the dreams of the King. He had an understanding and wisdom that only God could give. Finally Daniel was rewarded with a tremendous influence in the country of Babylon. The influence he had in society, and especially with the King, can be seen throughout the rest of the book of Daniel. If these rewards, physical health, intelligence, insight, and influence, were just seen in Daniel, one might say that it was just a coincidence. However, the Bible is full of examples of men and women who, by obeying God, have received similar rewards in their life. One must think of David, Joseph, Queen Esther, Moses, John the Baptist, and Paul. All of these pillars of Bible history were blessed as they obeyed God in their daily lives.

In conclusion, we must, in these closing hours of earth’s history, develop each of these seven character traits if we are going to stand for Jesus during these trying times. God wants us to be His very special chosen people to witness to this world. He wants us to be a people of deep conviction that is based on His word. He wants us to be committed to stand up for our convictions regardless of the circumstances or pressures brought upon us by the world. He wants us to be a courteous people that deal with each other gently and with meekness. He wants us, through study of the Bible and through life’s experiences, to develop firm and unshakable confidence in Him and His Word. Also, He wants us to have courage to privately and publicly stand for principle regardless of the circumstances or costs. Lastly, God wants us to be consistent in our character development and in our Christian walk before Him and the world. The development of these traits is crucial to the perfection of our character and our ability to witness to the power of God.

In Education, 57, we read: “The greatest want of the world is the want of men—men who do not fear to call sin by its right name, men who will not be bought or sold, men who in their inmost soul are true and honest, men whose conscience is as true to duty as the needle to the pole, men who will stand for the right though the heavens fall.” I want to develop this kind of character, one that is pleasing to God and is safe for Jesus to take to heaven, where sin will never again exist. We must have each of these seven traits of character. Just as God helped Daniel develop a lovely character, He will be our helper also. May we each strive, in the struggles of our captivity, in this world of “Babylon,” to be ready for the Lord’s soon return to claim His faithful children as His own. May this be not just a desire, but a reality in each of our lives. Let us pray for this experience for ourselves and all those we love in Christ Jesus.

Restoring the Temple – Nutrition, Eat Well and Live Well, Part I

How many times have you filled your car’s tank with premium gasoline (perhaps only a memory now, with today’s gas prices) or carefully fertilized your houseplants? We understand that the machine is only as good as the fuel it was given. You would never put fertilizer in your gas tank, or pour gasoline over your houseplants. You know what is best—and worst—for running each ‘machine,’ whether it is mechanical or natural. Yet when it comes to the human body, we treat food as merely something to fill our bellies and please the palate. When improper substances are added to the tank the machine breaks down. Anyone can understand the logic, yet it wasn’t until 1988 that the Surgeon General C. Everett Koop released the Surgeon General’s Report on Nutrition and Health, which was the government’s first formal recognition of the role of diet in disease. Because the study of the body has never been emphasized in most schools, the vast majority does not give this delicate machinery a second thought. Until it breaks down.

While Greek and Latin, which are seldom of any advantage, are made a study by many, physiology [the study of how the human body works] and hygiene are barely touched upon. The study to which to give thought is that which concerns natural life, a knowledge of oneself….It is the house in which we live that we need to preserve, that we may do honor to God who has redeemed us. We need to know how to preserve the living machinery, that our soul, body, and spirit may be consecrated to his service. As rational beings we are deplorably ignorant of the body and its requirements….This living machinery should be understood. Every part of its wonderful mechanism should be carefully studied. Physical life cannot be treated in a haphazard manner. Awaken to your responsibilities. Healthful Living, 13,14

A healthy diet provides energy to every cell in our bodies; supplies essential nutrients that the body is unable to make itself; and provides the raw materials for cell maintenance and growth. If you are missing one or more essential nutrients you are malnourished. It is possible for the overnourished individual to be malnourished,1 which is the profile of the common human, particularly in the Western civilizations.

For hundreds of years isolated groups of people, such as American Indians and the poorer classes, did not commonly have diseases such as heart disease and cancers. Those were considered the rich man’s diseases, for only the wealthier classes could afford to have meats, pastries, and other rich foods appear regularly on their table. When technological progress allowed even the poorest of people access to rich and refined foods, the incidence of heart disease skyrocketed.

According to the American Cancer Society, one third of cancer deaths are related to poor nutrition.2 Many medical practitioners believe the numbers to be far higher. The annual cost of cancer in the United States alone amounts to $107 billion.3 Coronary artery disease results from reduced blood supply to the heart. It is known that diet is the major factor in preventing and treating heart disease, yet more than half of Americans have cholesterol levels above the recommended maximum of 200mg/dL. Cardiovascular disease is the number one killer and cost the United States $286.5 billion in 1999.4

What foods contain the nutrients essential for our growth? Not surprisingly, the perfect diet was given to us not by a government agency in the 20th century, but by God to our first parents.

“And God said, Behold, I have given you every herb bearing seed, which is upon the face of all the earth, and every tree, in the which is the fruit of a tree yielding seed; to you it shall be for meat.” Genesis 1:29

Through God’s Eternal Truth, we know that fruits, vegetables, legumes, and grains provide all the fuel and nutrients our bodies require for health and vitality. Ellen White also comments on this:

Grains, fruits, nuts, and vegetables constitute the diet chosen for us by our Creator. These foods, prepared in as simple and natural a manner as possible, are the most healthful and nourishing. They impart a strength, a power of endurance, and a vigor of intellect that are not afforded by a more complex and stimulating diet. Ministry of Healing 296

At least three-quarters of Americans eat less than the recommended amounts of fruits and vegetables.5 The average Western diet consists of meat, dairy, and highly refined foods such as white bread, and most bakery products. Vegetables and whole grains appear as afterthoughts in small portions on the plate, if they appear at all.

But doesn’t my bowl of Sugar Bombs that I eat each morning contain 100% of the recommended daily allowance of vitamins and minerals? The label also says it contains wheat, isn’t that good for me? Let’s examine that for a moment. The little wheat kernel, packed full of nutrition, takes a trip from the farm to the mill where it is processed into soft white flour. In doing this, the parts that contain the majority of the vitamins and minerals and all the fiber—the germ and the bran—are removed. Often, these nutritious parts are sent back out to the farm where it is fed to livestock. Then, the manufacturers add a selection of cheap vitamins (that the body cannot easily absorb) so that they can now label their product as enriched. Does this sound like the height of nutrition to you?

Although many choose to take supplements, vitamins and minerals are best absorbed from food and are naturally balanced in food sources.6 These foods are best eaten as close as possible to how they came from nature. What could be better than a fresh juicy peach on a warm summer day or a bowl of steamed vegetable stir-fry to enliven a winter’s afternoon? How many of our diseases could be prevented by eating for nutrition instead of merely satisfying the taste buds? There’s a saying familiar to most dieters: a moment on the lips, a lifetime on the hips. Although not as catchy, it could be paraphrased into: a moment on the lips, a lifetime of paying for the damage.

Nutrients are required for life and health. Junk food and refined foods are poor sources of nutrition and can contribute to disease. Nature provides the ideal sources of fuel in the form of whole grains, legumes, fruits and vegetables. Let us awaken to our responsibilites.

Restoring the Temple – Hygiene

In the teaching that God gave to Israel, the preservation of health received careful attention. The people who had come from slavery with the uncleanly and unhealthful habits which it engenders, were subjected to the strictest training in the wilderness before entering Canaan. Health principles were taught and sanitary laws enforced.

Prevention of Disease

Not only in their religious service, but in all the affairs of daily life was observed the distinction between clean and unclean. All who came in contact with contagious or contaminating diseases were isolated from the encampment, and they were not permitted to return without thorough cleansing of both the person and the clothing. In the case of one afflicted with a contaminating disease, the direction was given: “Every bed, whereon he lieth,…is unclean: and everything, whereon he sitteth, shall be unclean. And whosoever toucheth his bed shall wash his clothes, and bathe himself in water, and be unclean until the even. And he that sitteth on anything whereon he sat…shall wash his clothes, and bathe himself in water, and be unclean until the even. And he that toucheth the flesh of him…shall wash his clothes, and bathe himself in water, and be unclean until the even.…And whosoever toucheth anything that was under him shall be unclean until the even: and he that beareth any of those things shall wash his clothes, and bathe himself in water, and be unclean until the even. And whomsoever he toucheth…and hath not rinsed his hands in water, he shall wash his clothes, and bathe himself in water, and be unclean until the even. And the vessel of earth, that he toucheth,…shall be broken: and every vessel of wood shall be rinsed in water.” Leviticus 15:4-12.

The law concerning leprosy is also an illustration of the thoroughness with which these regulations were to be enforced: “All the days wherein the plague shall be in him [the leper] he shall be defiled; he is unclean: he shall dwell alone; without the camp shall his habitation be. The garment also that the plague of leprosy is in, whether it be a woolen garment, or a linen garment; whether it be in the warp, or woof; of linen, or of woolen; whether in a skin, or in anything made of skin;…the priest shall look upon the plague:…if the plague be spread in the garment, either in the warp, or in the woof, or in a skin, or in any work that is made of skin; the plague is a fretting leprosy; it is unclean. He shall therefore burn that garment, whether warp or woof, in woolen or in linen, or anything of skin, wherein the plague is: for it is a fretting leprosy; it shall be burnt in the fire.” Leviticus 13:46–52.

So, too, if a house gave evidence of conditions that rendered it unsafe for habitation, it was destroyed. The priest was to “break down the house, the stones of it, and the timber thereof, and all the mortar of the house; and he shall carry them forth out of the city into an unclean place. Moreover he that goeth into the house all the while that it is shut up shall be unclean until the even. And he that lieth in the house shall wash his clothes; and he that eateth in the house shall wash his clothes.” Leviticus 14:45–47.

Cleanliness

The necessity of personal cleanliness was taught in the most impressive manner. Before gathering at Mount Sinai to listen to the proclamation of the law by the voice of God, the people were required to wash both their persons and their clothing. This direction was enforced on pain of death. No impurity was to be tolerated in the presence of God.

During the sojourn in the wilderness the Israelites were almost continually in the open air, where impurities would have a less harmful effect than upon the dwellers in closed houses. But the strictest regard to cleanliness was required both within and without their tents. No refuse was allowed to remain within or about the encampment. The Lord said:

“The Lord thy God walketh in the midst of thy camp, to deliver thee, and to give up thine enemies before thee; therefore shall thy camp be holy.” Deuteronomy 23:14.

Diet

The distinction between clean and unclean was made in all matters of diet: “I am the Lord thy God, which have separated you from other people. Ye shall therefore put difference between clean beasts and unclean, and between unclean fowls and clean: and ye shall not make your souls abominable by beast, or by fowl, or by any manner of living thing,…which I have separated from you as unclean.” Leviticus 20:24, 25.

Many articles of food eaten freely by the heathen about them were forbidden to the Israelites. It was no arbitrary distinction that was made. The things prohibited were unwholesome. And the fact that they were pronounced unclean taught the lesson that the use of injurious foods is defiling. That which corrupts the body tends to corrupt the soul. It unfits the user for communion with God, unfits him for high and holy service.

In the Promised Land the discipline begun in the wilderness was continued under circumstances favorable to the formation of right habits. The people were not crowded together in cities, but each family had its own landed possession, ensuring to all the health-giving blessings of a natural, unperverted life.

Concerning the cruel, licentious practices of the Canaanites, who were dispossessed by Israel, the Lord said: “Ye shall not walk in the manners of the nation, which I cast out before you: for they committed all these things, and therefore I abhorred them.” Verse 23. “Neither shalt thou bring an abomination into thine house, lest thou be a cursed thing like it.” Deuteronomy 7:26.

In all the affairs of their daily life, the Israelites were taught the lesson set forth by the Holy Spirit: “Know ye not that ye are the temple of God, and that the Spirit of God dwelleth in you? If any man defile the temple of God, him shall God destroy; for the temple of God is holy, which temple ye are.” 1 Corin-thians 3:16, 17.

Rejoicing

“A merry [rejoicing] heart doeth good like a medicine.” Proverbs 17:22. Gratitude, rejoicing, benevolence, trust in God’s love and care—these are health’s greatest safeguards. To the Israelites they were to be the very keynote of life.

The journey made three times a year to the annual feasts at Jerusalem, the week’s sojourn in booths during the Feast of Tabernacles, were opportunities for outdoor recreation and social life. These feasts were occasions of rejoicing, made sweeter and more tender by the hospitable welcome given to the stranger, the Levite, and the poor.

“Rejoice in every good thing which the Lord thy God hath given unto thee, and unto thine house, thou, and the Levite, and the stranger that is among you.” Deuteronomy 26:11.

So, in later years, when the law of God was read in Jerusalem to the captives returned from Babylon, and the people wept because of their transgressions, the gracious words were spoken: “Mourn not.…Go your way, eat the fat, and drink the sweet, and send portions unto them for whom nothing is prepared: for this day is holy unto our Lord: neither be ye sorry; for the joy of the Lord is your strength.” Nehemiah 8:9, 10.

God gave to Israel instruction in all the principles essential to physical as well as to moral health, and it was concerning these principles no less than concerning those of the moral law that He commanded them: “These words, which I command thee this day, shall be in thine heart: and thou shalt teach them diligently unto thy children, and shalt talk of them when thou sittest in thine house, and when thou walkest by the way, and when thou liest down, and when thou risest up. And thou shalt bind them for a sign upon thine hand, and they shall be as frontlets between thine eyes. And thou shalt write them upon the posts of thy house, and on thy gates.” Deuteronomy 6:6–9.

“And when thy son asketh thee in time to come, saying, What mean the testimonies, and the statutes, and the judgments, which the Lord our God hath commanded you? Then thou shalt say unto thy son,…The Lord commanded us to do all these statutes, to fear the Lord our God, for our good always, that He might preserve us alive, as it is at this day.” Verses 20–24.

Had the Israelites obeyed the instruction they received, and profited by their advantages, they would have been the world’s object lesson of health and prosperity. If as a people they had lived according to God’s plan, they would have been preserved from the diseases that afflicted other nations. Above any other people they would have possessed physical strength and vigor of intellect. They would have been the mightiest nation on the earth. God said: “Thou shalt be blessed above all people.” Deuteronomy 7:14.

“The Lord hath avouched thee this day to be His peculiar people, as He hath promised thee, and that thou shouldest keep all His commandments; and to make thee high above all nations which He hath made, in praise, and in name, and in honor; and that thou mayest be an holy people unto the Lord thy God, as He hath spoken.” Deuteronomy 26:18, 19.

“And all these blessings shall come on thee, and overtake thee, if thou shalt hearken unto the voice of the Lord thy God. Blessed shalt thou be in the city, and blessed shalt thou be in the field. Blessed shall be the fruit of thy body, and the fruit of thy ground, and the fruit of thy cattle, the increase of thy kine, and the flocks of thy sheep. Blessed shall be thy basket and thy store. Blessed shalt thou be when thou comest in, and blessed shalt thou be when thou goest out.” Deuteronomy 28:2–6.

To Aaron the high priest and his sons the direction was given: “On this wise ye shall bless the children of Israel, saying unto them, ‘Jehovah bless thee, and keep thee: Jehovah make His face to shine upon thee, And be gracious unto thee: Jehovah lift up His countenance upon thee, And give thee peace. So shall they put My name upon the children of Israel; And I will bless them.”

“…As thy days, so shall thy strength be. There is none like unto God, O Jeshurun, Who rideth upon the heaven for thy help, And in His excellency on the skies. The eternal God is thy dwelling place, And underneath are the everlasting arms.…Israel dwelleth in safety, The fountain of Jacob alone, “In a land of corn and wine; Yea, His heavens drop down dew. Happy art thou, O Israel: Who is like unto thee, a people saved by the Lord,

The shield of thy help, And that is the sword of thy excellency!” Numbers 6:23; 6:24–27, A.R.V.; Deuteronomy 33:25–29, R.V.

The Israelites failed of fulfilling God’s purpose, and thus failed of receiving the blessings that might have been theirs. But in Joseph and Daniel, in Moses and Elisha, and many others, we have noble examples of the results of the true plan of living. Like faithfulness today will produce like results. To us it is written: “Ye are a chosen generation, a royal priesthood, an holy nation, a peculiar people; that ye should show forth the praises of Him who hath called you out of darkness into His marvelous light.” 1 Peter 2:9.

Restoring the Temple – Diet and Health

Only one lease of life is granted us; and the inquiry with everyone should be, “How can I invest my powers so that they may yield the greatest profit? How can I do most for the glory of God and the benefit of my fellow men?” For life is valuable only as it is used for the attainment of these ends.

Self-Development a Duty

Our first duty toward God and our fellow beings is that of self-development. Every faculty with which the Creator has endowed us should be cultivated to the highest degree of perfection, that we may be able to do the greatest amount of good of which we are capable. Hence that time is spent to good account which is used in the establishment and preservation of physical and mental health. We cannot afford to dwarf or cripple any function of body or mind. As surely as we do this we must suffer the consequences.

Every man has the opportunity, to a great extent, of making himself whatever he chooses to be. The blessings of this life, and also of the immortal state, are within his reach. He may build up a character of solid worth, gaining new strength at every step. He may advance daily in knowledge and wisdom, conscious of new delights as he progresses, adding virtue to virtue, grace to grace. His faculties will improve by use; the more wisdom he gains, the greater will be his capacity for acquiring. His intelligence, knowledge, and virtue will thus develop into greater strength and more perfect symmetry.

On the other hand, he may allow his powers to rust out for want of use, or to be perverted through evil habits, lack of self-control or moral and religious stamina. His course then tends downward; he is disobedient to the law of God and to the laws of health. Appetite conquers him; inclination carries him away. It is easier for him to allow the powers of evil, which are always active, to drag him backward, than to struggle against them, and go forward. Dissipation, disease, and death follow. This is the history of many lives that might have been useful in the cause of God and humanity.

Temptation Through Appetite

One of the strongest temptations that man has to meet is upon the point of appetite. In the beginning the Lord made man upright. He was created with a perfectly balanced mind, the size and strength of all his organs being fully and harmoniously developed. But through the seductions of the wily foe the prohibition of God was disregarded, and the laws of nature wrought out their full penalty. . . .

Thus we often find it, even in the religious world. God’s expressed commands are transgressed; and “because sentence against an evil work is not executed speedily, therefore the heart of the sons of men is fully set in them to do evil.” Ecclesiastes 8:11. In the face of the most positive commands of God, men and women will follow their own inclinations, and then dare to pray over the matter, to prevail upon God to allow them to go contrary to His expressed will. . . .

Intemperance and Crime

Crime and disease have increased with every succeeding generation. Intemperance in eating and drinking, and the indulgence of the baser passions, have benumbed the nobler faculties of man. Reason, instead of being the ruler, has come to be the slave of appetite to an alarming extent. An increasing desire for rich food has been indulged, until it has become the fashion to crowd all the delicacies possible into the stomach. Especially at parties of pleasure is the appetite indulged with but little restraint. Rich dinners and late suppers are served, consisting of highly seasoned meats, with rich sauces, cakes, pies, ices, tea, coffee, etc. No wonder that with such a diet people have sallow complexions and suffer untold agonies from dyspepsia [indigestion]. Against every transgression of the laws of life, nature will utter her protest. She bears abuse as long as she can; but finally the retribution comes, and it falls upon the mental as well as the physical powers. Nor does it end with the transgressor; the effects of his indulgence are seen in his offspring, and thus the evil is passed down from generation to generation. . . .

Wrong Eating Destroys Health

A wrong course of eating or drinking destroys health, and with it the sweetness of life. . . . Thousands, by indulging a perverted appetite, have brought on fever or some other acute disease, which has resulted in death. That was enjoyment purchased at an immense cost. . . .

Too Frequent Eating a Cause of Dyspepsia

Many indulge in the pernicious habit of eating just before retiring. They may have taken their regular meals, yet because they feel a sense of faintness they think they must have a lunch. By indulging this wrong practice it becomes a habit, and they feel as though they could not sleep without food. In many cases this faintness comes because the digestive organs have been too severely taxed through the day in disposing of the great quantity of food forced upon them. These organs need a period of entire rest from labor, to recover their exhausted energies. . . . When we lie down at night, the stomach should have its work all done, that it, as well as other portions of the body, may enjoy rest. But if more food is forced upon it, the digestive organs are put in motion again, to perform the same round of labor through the sleeping hours. The sleep of such is often disturbed with unpleasant dreams, and in the morning they awake unrefreshed. When this practice is followed, the digestive organs lose their natural vigor, and the person finds himself a miserable dyspeptic. And not only does the transgression of nature’s laws affect the individual unfavorably, but others suffer more or less with him. Let anyone take a course that irritates him in any way, and see how quickly he manifests impatience. He cannot, without special grace, speak or act calmly. He casts a shadow wherever he goes. How can anyone say, then, “It is nobody’s business what I eat or drink”? —Counsels on Health, 107–119.

Restoring The Temple – Depression and Diet

“Why art thou cast down, O my soul? and [why] art thou disquieted in me? hope thou in God: for I shall yet praise him, for the help of his countenance.” —Psalm 42:5.

Depression affects 200 million people world- wide, which is one person out of thirty of the world’s population. In the United States, it will affect 19 million Americans this year, or one person out of sixteen. In the United States alone, the cost of dealing with this disease is $70 billion per year. It approaches the amount spent on heart disease, the number one cause of death in this country. The United States antidepressant drug sales have risen 800 percent to $10.2 billion since 1990. The number of people taking antidepression medication has also steadily increased. The World Health Organization reports that, by the year 2020, depression will likely be the second leading cause of disease worldwide.

Depression knows no cultural, social, or economic barriers. It afflicts people of every age, race, religion, and educational background. More people are suffering from depression now than in previous generations.

For deliverance from depression to take place, we must determine what the causes and symptoms of the depression are. Depression is one of the most common forms of mental illness, a common mood disorder. Some of the symptoms of depression which are often present include feelings of persistent sadness and gloom, reduced physical activity, feelings of irrational anxiety, and a sense of hopelessness. Depressed people may have other symptoms such as difficulty concentrating; their sleep and appetite may be affected; they may feel tired all the time, may lose interest in life, experience negative thinking, and have thoughts of suicide.

What brings about such a condition as depression? What are some of the causative factors? Some cases of depression appear suddenly for no apparent reason; others are brought about by stressful life events such as the death of a loved one, divorce, or job loss. Research has also confirmed that some cases of depression are brought on slowly and subtly over time by poor lifestyle habits. Science has identified several factors, which can promote and even intensify feelings of hopelessness and despair. Some of these factors include alcohol, smoking, caffeine, physical inactivity, improper diet, stressful living circumstances, food allergies, high blood pressure medication, and various other medications.

How can one be delivered from depression? While medication can sometimes provide temporary relief from symptoms, we find chronic use of antidepressants can lead to physical and emotional dependency and may actually deepen the depression. God has something better; there is a way out. Nearly all types of depression will respond to some fundamental basic methods. The eight principles of GOD’S PLAN—Godly trust, Open air, Daily exercise, Sunshine, Proper rest, Lots of water, Always temperate, and Nutrition—can be incorporated in one’s life to bring about the positive results.

There is deliverance from depression. We must have a firm trust and hold upon God. And in conjunction with this, we need to develop proper lifestyle habits. We need tasks with a purpose. We all need to be productive. We need to have a feeling of accomplishment, completion, and satisfaction in doing something useful each day. We need to have structure and regularity, observing regular hours for eating, sleeping, and working. We need to have a healthful diet, eating fresh natural foods, which give an increase of mental and physical energy. Eating plenty of fresh fruits for a day or two can do wonders in clearing the mind; going on a one or two-day fast, getting adequate rest, and incorporating periods of quietness and calm are especially important. Sleep deprivation can set off or intensify depression. Most people feel their best with seven to eight hours of sleep, daily exercise, and 30 to 40 minutes of aerobic- type activity such as brisk walking, bicycling, or hiking. These stimulate the release of mood altering natural chemicals called endorphins. Ecclesiastes 11:7 says, “Truly the light is sweet, and a pleasant thing it is for the eyes to behold the sun.” Daily sunlight has been used successfully for many years in the treatment of many types of depression. Trust in God is very important. Bearing heavy burdens alone is enough to crush one’s spirit. The Bible encourages us to cast all our cares upon Him who cares about us and He will sustain us. 1 Peter 5:7; Psalm 55:22. We need to educate ourselves to express thanks, praising God for the many blessings that He has given us. Learn to talk hope and faith; this can have a positive impact upon your life.

Many who are depressed do not know that the kinds of foods they partake of is a causative factor in determining their mental state. With this concept in mind, we need to explore the different kinds of foods that can cause depression. It is also important to examine the scientific evidence of how food affects the mental state of individuals.

What kinds of foods do people turn to when depressed? The most common foods to cause mental disturbance are sugar, milk, and milk products. “Sugars are closely linked to feelings of despair, depression, alienation, and sugar strengthens feelings of individuality.” Annemarie Colbin, Food and Healing, Ballantine Books, New York, 1986, 290.

Wheat can cause unpleasant allergic reactions, often in the form of moodiness and depression. Wheat is an ingredient found in many of the foods we eat. Other common culprits are caffeine, coffee, carbonated beverages, and chocolate. “By restricting the sugar and caffeine intake of people with depression, it has been reported to elevate moods in preliminary research.” W. Lininger Schuyler (Editor), et. al., The Natural Pharmacy, Prima Publishing, New York, 1999, 50.

Sugar, food colorings, and foods that are low in folic acid and vitamin B12 are associated with and can contribute to depression. Here we see scientific research has shown that foods can cause depression. Eating for comfort or overindulging often leads to obesity and bulimia, which is a part of the depression cycle.

Let’s review some scientific facts in regard to foods that can cause depression. In the book Depression: The Way Out, Dr. Neil Nedly states, “Diet has such a profound effect on human metabolism that it comes as no surprise that there are many interrelationships between the foods we eat and our risk of depression.” (Nedly Publishing, Ardmore, Oklahoma, 2001, 34.) The absence of Omega 3 Essential Fatty Acids causes an imbalance in the brain, thereby affecting mental health.

How can we overcome? By using God’s Life Activating Diet (G.L.A.D.), a diet low in fat, low in protein, high in fiber, and high in nutrients. It provides the tools necessary for overcoming depression. The highest source of fiber is whole grains. When we make the change to GOD’S PLAN, then we can ask God to give us victory over depression because “with God all things are possible.” Matthew 19:26.

We need to bring into balance the chemical makeup of our brains by making proper food choices. Leviticus 17:11 states, “The life of the flesh [is] in the blood.” “The brain is the organ and instrument of the mind, and controls the whole body. In order for the other parts of the system to be healthy, the brain must be healthy. And in order for the brain to be healthy, the blood must be pure. If by correct habits of eating and drinking the blood is kept pure, the brain will be properly nourished.” Medical Ministry, 291. It is our responsibility to choose the necessary nutrients that will nourish our brains and not eat those things that will strip and rob the brain, causing us to be in a state of mental depression.

In validation of the G.L.A.D. diet, there is documented proof of research done that states that the Standard American Diet (S.A.D.), which is high in fat and protein and low in fiber and nutrients, contributes to bipolar disorder and other mental depression. If you use a low fat and low protein, high fiber and high nutrient diet, it will improve the mental state. “Those who consume a low fat and high complex carbohydrate diet show significantly greater improvement when dealing with depression.” Melvyn R. Werbach, M.D., Nutritional Influence on Mental Illness, Third Line Press, Inc., Tarzana, California, 1999, 221.

Health – Is diet a Salvational Issue

Some time ago a Seventh-day Adventist pastor asked this question from the pulpit: “Is what you eat a salvational issue?” The response from the congregation was a very loud and overwhelming “NO!’’

Since when does consensus establish truth? Let us take a long and intensive look at this question from Scripture and the Spirit of Prophecy and see if we can determine the truth from Inspired writing.

We will first go to the very beginning of Scripture in Genesis, chapter 1.

The original diet was given to mankind by our Creator, who should know better than any other being what would be best for us. Genesis 1:29 states: “And God said, Behold, I have given you every herb bearing seed, which is upon the face of all the earth, and every tree, in the which is the fruit of a tree yielding seed; to you it shall be for meat.” One can see that the original diet for mankind was a vegan diet. Absolutely no animal products or any refined or artificially manufactured products.

After the fall of man and his/her expulsion from the garden he was told to also eat “… the herb of the field.” This verse gave man permission to now eat things that grow in the dirt, which are assumed to be vegetables.

At this point we need to determine what is a fruit and what is a vegetable. A botanical definition is that a fruit is something that the plant produces and a vegetable is part of the plant itself, such as the leaves, the stem, or the root. Most of what we eat is classified as fruit. All products of trees, vines or bushes are fruits, e.g., apples, pears, peaches, nuts, berries, grapes, tomatoes, and such. Grains are actually fruits of grasses, as is corn. Such things as beets, carrots, celery, cabbage, lettuce, and the like, are vegetables or herbs of the field. These things were probably added since the abundance of fruits in the garden were now not available.

Now we come to the time of Noah in Genesis 6–9. Notice that God instructed Noah to take into the ark, which he had spent 120 years building, two, a male and a female, of every unclean animal, and seven of every clean animal (Genesis 7:2). The distinction between clean and unclean animals can be found in Leviticus, chapter 11. The reason for this is because the flood was going to destroy all life, plant and animal, from off the face of the earth. Following the flood Noah and his family would need something to eat until the new growth upon the face of the earth could be well established. That would take at least a year or maybe two.

I firmly believe that the permission to eat animals was only supposed to be temporary until plant life was reestablished sufficiently to provide what God had originally intended that we should eat. I can’t prove it, but since the Spirit of Prophecy states that man’s intelligence before the flood was vastly superior to ours today that Noah most probably also took a great abundance of seed onto the ark to be able to reestablish a productive garden and fruit trees in the ‘’new” earth after the flood. He also had to have enough stored food for all the animals that were now released upon a devastated world. I personally do not think that God ever intended that mankind would continue to consume animals for any length of time.

There were many things that could make a person ritually “unclean,” not just the use of an unclean animal for food: contamination with blood, or contact with a corpse to name a couple. The penalty for becoming ritually unclean was that the “unclean” individual was to leave the camp, wash himself and his clothes with water and wait until sundown, which began a new day. He then returned to the camp and went to the tabernacle where a specific offering was given. Afterwards he was then accepted back into full fellowship.

However, the penalty for the consumption of blood or fat from an animal was far more serious. Even Noah, in chapter 9 of Genesis, was told that when he began to use “clean” animals for food that he was in no way permitted to use any of the blood for food (verse 4). It was expressly forbidden by God to do so. Leviticus says in three places that it was a perpetual covenant that the fat and the blood were never to be consumed as food.

The penalty for the consumption of either fat or blood was that the individual was to be “cut off’ from the camp.” The Hebrew word used for cut off is karath. Daniel 9:26 states that, “After threescore and two weeks shall Messiah be cut off.” [Emphasis supplied.] The same Hebrew word for cut off is used here. The penalty for the consumption of blood or fat is far worse than just becoming “unclean.” I dare say that today those who consume animal flesh are not using ritually slaughtered nor ritually prepared animals for the source of animal flesh. Just remember, God NEVER changes. He is the same yesterday, today, and forever.

Yes, ancient Jews as well as observant Jews and even Jesus ate animal flesh at least on Passover. The lamb that was roasted was certainly ritually prepared so that it was not unclean nor did they eat any of the fat or blood. So Jesus would have eaten animal flesh at least once per year on Passover. We also find a few occasions where He ate fish. Carnivores love to refer to this fact. In His 33 years upon this earth you can count on one hand the number of times that the Scriptures tell of Jesus eating fish. The carnivores use that as an excuse to consume animal flesh usually daily. “If meat eating was ever healthful, it is not safe now. Cancers, tumors, and pulmonary diseases are largely caused by meat eating.” Counsels for the Church, 236.

‘’If any man defile the temple of God, him shall God destroy; for the temple of God is holy, which temple ye are” (1 Corinthians 3:17). I had a pastor tell me that this verse is in the plural and therefore does not apply to the individual, but the church body. After researching this verse in the writings of Ellen G. White, of the 42 times she references this verse, every time she applies it to the individual. So it becomes abundantly clear that if you do not take care of the physical body given you by Christ, you will not make it into the kingdom of God. Of course this applies to those who should know better, have access to Scriptures and the Spirit of Prophecy, or have the opportunity to find out the truth.

Restoring the Temple – A Low Fat Diet

Why a Diet Low in Fat and Cholesterol Can Help You

Heart and blood vessel problems, such as angina and hypertension, disorders such as diabetes and hypoglycemia, which involve the body’s ability to handle sugar, and other ailments as well, are beginning to be recognized as primarily due to the diet we consume. The diet eaten in advanced countries such as the United States has a total fat content of 40 to 50 percent of calories consumed. It is also very high in refined carbohydrates. Scientific investigators have found that in poorer countries, where the people eat a diet, usually fewer than 20 percent of calories in fat, consisting mainly of unrefined carbohydrates such as whole grains, fruits, and vegetables, these diseases are almost never found. The more fat and refined carbohydrates eaten, the more degenerative disease problems are found.

Scientists have studied the effects of our typical diet in laboratories and clinics and have confirmed the suspicions that the large amounts of fat and refined carbohydrates consumed in this country can bring on these degenerative diseases. A diet in which fat and refined carbohydrates are sharply curtailed can cause these disease symptoms to lessen and even to disappear completely.

The kind of fat does not seem to matter. The fats may be those from dairy products, such as those found in whole milk, butter, and cheese; or in the form of vegetable fats as found in the oil of nuts, seeds, avocados, olives, and vegetable oil spreads such as margarine or nut butters; or fat as found in animal foods. It is the total amount of fat of all kinds that is consumed that matters—the more fat, the more disease symptoms.

Cholesterol

In addition to the fat contained, animal muscle tissue of all kinds—beef, pork, lamb, poultry, fish, shellfish, but especially organ tissue (liver, brains, kidneys) and eggs (chicken eggs, fish roe)—introduce still another harmful substance into our body—cholesterol. While the body needs some cholesterol, it produces all that it requires. If additional cholesterol is added to the diet, it becomes stored in the blood and tissues, since the body is unable to excrete it. In the presence of blood that has a high concentration of fat, the excess-stored cholesterol, in time, causes lesions called plaques to form inside the blood vessels. This condition is known as atherosclerosis.

On our usual high fat diet, these plaques begin to form even in the very young, gradually building up over a period of time and narrowing the channels in the blood vessels. This narrowing of the blood vessels reduces the amount of blood flow to the tissues served by these vessels, and in time, the heart compensates by elevating the blood pressure more and more, producing high blood pressure or hypertension.

If the blood vessels that serve the heart (coronary vessels) become sufficiently clogged by plaques, any circumstance that further reduces the already diminished oxygen sup-ply to the heart muscle will cause the heart to “cry out” in pain—the terrible pain of angina. A slight exertion such as running a short distance, an emotional episode, or even a single fat meal, can bring on an angina attack. In one experiment, the angina patient subjects did nothing but drink a glass of cream. Even though they were at complete rest, all of them suffered angina attacks.

Oxygen Deprivation

A fatty meal reduces the oxygen supply to all of the body tissues, not only to the vessels serving the heart. This will happen even if plaques do not clog your arteries—though few adults are so lucky, unless they have been on a lifelong low-fat, low-cholesterol diet. Even in a baby, fat steals oxygen from the body cells. It steals oxygen from the tissues just as carbon monoxide does when taken in by smoking. In the case of fat, this happens because of several mechanisms. When the digested fat is broken down, it forms tiny fat balls, which tend to clump together in the bloodstream. These aggregate with solid elements in the blood and block the blood flow in the tiniest arteries, thus depriving the cells in the tissues fed by those arteries of needed oxygen nourishment. The tiny fat balls also coat these solid elements in the blood. As a result, the red blood cells that are the body’s oxygen carriers become stuck together in formations resembling rows of coins. The clumping of the red blood cells further slows the circulation, depriving the tissues of even more oxygen. When the clumped red blood cells reach the lungs, where they should take up oxygen from the air breathed in, being clumped together, much of their surface area is not free to pick up oxygen. In this way, much less oxygen is carried back into the tissues, which are still further deprived of oxygen.

Plaques

It is because of this process of depriving the body cells of oxygen that fats enable cholesterol to form the atherosclerotic plaques. The artery walls become more easily penetrated by fats and cholesterol when the blood that bathes them is deficient in oxygen, thus encouraging the plaques to form. On a high-fat diet, the process of plaque formation goes on hour after hour, day after day, in all of the arterial vessels throughout the body. In the course of many years, the constant narrowing of these vessel channels by the ever-growing plaque formations causes many symptoms. High blood pressure and angina are two of the common symptoms. Other symptoms include a gradual deterioration in hearing and vision, and even senility and impotency.

Low-fat Diet Advantages

In many studies, it has been shown that by going on a diet in which fat and cholesterol intake are sharply reduced, the plaque-forming process can be reversed and the symptoms produced by the artery damage lessened or even eliminated. Refined carbohydrates and added salt have been found to contribute significantly to the development of heart and blood vessel problems. On a low-fat diet, the plaques or sores that are narrowing the arteries should gradually begin to disappear so that near-normal circulation will be restored.

This same diet has proved successful in reversing diabetes and hypoglycemia. Hypoglycemia is a pre-diabetic stage, caused by similar abnormal conditions in the blood. Diabetes and hypoglycemia appear under circumstances that occur when the concentration of fats in the blood is very high. By lowering the blood fats by a diet low in fats of all kinds and low in simple carbohydrates like sugar, honey, and molasses, a Canadian investigator, Dr. I. M. Rabinowitch, treating 1,000 diabetics over a five-year period, had a high rate of success. Even insulin-dependent diabetics no longer required insulin or other drugs in 25 percent of the cases. Had the diet been even lower in fat content, Dr. Rabinowitch would have obtained an even higher reversal rate, based on the experiences of others.

High blood fats bring about a situation where the insulin from the pancreas is unable to effectively act upon blood sugar. Studies have been done where perfectly normal young men were made diabetic in a period of days or even hours, depending upon how fast fats were introduced into their blood. When fats were introduced rapidly, by injection into the bloodstream instead of by diet, they became diabetic in two hours. The scientists who did this study were also able to reverse diabetes by chemically lowering the blood fats.

If you would lower your blood fats by a gradual and permanent means by your diet, the fast results you could obtain would surprise you, if you adhered to the diet closely.

Certain kinds of arthritis also respond well to a diet by which blood fats are reduced. High blood fat levels cause the watery part of the blood (plasma) to seep out of the tiniest arteries (capillaries) at an abnormally high rate, due to the pressure built up in the capillaries when the circulation becomes slowed. The resultant swelling or edema produced in the tissues pro-vides the environment conducive to the development of arthritic symptoms. When the edema and slowed circulation in the capillaries are improved, marked relief and recovery can occur. Other diseases also have shown an improvement on this type of diet, such as colitis, gallbladder disease, hypertension (high blood pressure), and obesity.
