The Three Mother Churches

In this article, we are going to study the three mother churches. If you are a member of a Christian church, one of these three mother churches is, no doubt, your spiritual mother. By the end of this study, you should be able to identify whose child you are.

Babylon—The Mother of Harlots

Revelation 17 tells about the first mother church we will study. Notice the characteristics of this mother church. “Then one of the seven angels who had the seven bowls came and talked with me, saying to me, ‘Come, I will show you the judgment of the great harlot who sits on many waters, with whom the kings of the earth committed fornication, and the inhabitants of the earth were made drunk with the wine of her fornication. So he carried me away in the Spirit into the wilderness. And I saw a woman sitting on a scarlet beast which was full of names of blasphemy, having seven heads and ten horns. The woman was arrayed in purple and scarlet, and adorned with gold and precious stones and pearls, having in her hand a golden cup full of abominations and the filthiness of her fornication. And on her forehead a name was written: Mystery, Babylon the great, the mother of harlots and the abominations of theearth.” Revelation 17:1–5.

In Bible prophecy, a woman represents a church. (See Jeremiah 6:2; Isaiah 51:15; 2 Corinthians 11:2.) There are whole books of the Bible, such as the Song of Solomon, that are written with this symbolism. In the book of Hosea, and in Ezekiel 23, an unfaithful church is represented as a harlot.

What is spiritual harlotry or adultery? Let me give an example to help us understand. When you get married, a part of your marriage vow is not only that you will cling to your husband or wife, but also that you will forsake all others. What if you do not forsake all others? Then, you commit adultery. It is this simple; if you have only one husband, then it is holy. But, if you have two or three husbands or two or three wives, then it is not holy any more. It is wicked!

When you become part of the church, part of God’s family, you claim to be joined to one husband—Christ. (See 2 Corinthians 11:2.) If you are “espoused to one husband,” and then you take your affection and you pour it out on people, places or things of this world, what have you done? We can read about it in Ezekiel 23:35, 38. “Therefore thus says the Lord God. ‘Because you have forgotten Me and cast Me behind your back, therefore you shall bear the penalty of your lewdness and your harlotry.’ The Lord also said to me, ‘Son of man, will you judge Oholah and Oholibah? Then declare to them their abominations. For they have committed adultery, and blood is on their hands. They have committed adultery with their idols, and even sacrificed their sons whom they bore to Me, passing them through the fire to devour them. Moreover they have done this to Me: They have defiled My sanctuary on the same day and profaned My Sabbaths.’”

When you become part of God’s family, you have one Husband and you are to be faithful to Him. You are to obey Him and keep His commandments. But if you disobey His commandments, then you have forsaken Him for others.

Consider again the woman, which we see in Revelation 17. She is a harlot church, or a church that teaches people to break God’s commandments. (In fact, they break God’s commandments as a part of their religion.) We read in Revelation 18:2, that this same apostate power has “become the prison for every foul spirit, and a cage for every unclean and hated bird!” The devil is there, and through that system he teaches men to break the commandments. And if you stay there, if you are a part of Babylon, you will sin just by being part of the system. Revelation 18:4 says, “ ‘Come out of her, My people, lest you share in her sins and lest you receive of her plagues.’” If you stay in Babylon, you are going to share in her sins and then you are also going to partake of her plagues.

A Worldwide Persecuting power

This system of Babylon, described in Revelation, is a worldwide phenomenon. It is not something that just takes place off in an obscure corner of the world. We read in Revelation 18:3, “for all the nations have drunk of the wine of the wrath of her fornication, the kings of the earth have committed fornication with her, and the merchants of the earth have become rich through the abundance of her luxury.” All the nations of the world are involved.

“The light of a lamp shall not shine in you anymore, and the voice of the bridegroom and bride shall not be heard in you anymore. For your merchants were the great men of the earth, for by your sorcery, all nations were deceived. And in her was found the blood of prophets and saints, and of all who were slain on the earth.” Revelation 18:23, 24.

I remember about thirty years ago, when I first read this and tried to understand what verse 24 meant when it said that Babylon was guilty for the blood of all the saints. However, as I studied, I found that this was not the first time God has made this pronouncement. Jesus told the Jewish leaders: “Therefore, indeed, I send you prophets, wise men, and scribes: some of them you will kill and crucify, and some of them you will scourge in your synagogues and persecute from city to city, that on you may come all the righteous blood shed on the earth, from the blood of righteous Abel to the blood of Zechariah, son of Barechiah, whom you murdered between the temple and the altar.” Matthew 23:34, 35.

Here Jesus told the Jews that they would have to give an account for all the righteous blood that is shed upon the earth. How can that be explained? Because they rejected the Messiah. Do you realize that if the Jews had accepted Jesus, all of world history would have been different? (For an interesting study, take these verses in Matthew 23 and read what Ellen White says about them. It is very ominous for Seventh-day Adventists. What happened to the Jews could happen to Adventism if the devil’s plan is followed.)

Just as the Jews will be held accountable for the blood of all the righteous in their day, so God will judge Babylon as guilty for all of the blood of the saints. A careful look at history, behind the scenes, shows the truth of this statement. Very few people really know very much about the true facts of history. But, someday, the curtain will be removed, and it all will be distinctly seen as God has clearly recorded it for every eye to behold when the harlot is judged.

Another proof that Babylon is a worldwide power, is the fact that the Bible says, in Revelation 13:8, that every single person in the world, whose name is not written in the Book of Life, will worship this power for a short time. However, eventually, they will all unite to destroy her when they find out the truth that they are lost. Because God does not desire any to be lost, His message to each person is “Come out.” Those who do not answer this call will meet the same fate as the devil and all of his angels. And so God, in His mercy, wants you to be saved and says, “Come out!”

Have you ever tried to think through what this means when God says, “Come out”? Does coming out of Babylon involve mostly where your body is? Or is it more involved with where your mind is? Does it involve more what church book your name is written on? Or does it involve more where your heart is? Coming out of Babylon is much more involved than some people think. It is much more than just what church book your name is on and where your body is. It has to do with where your mind and your heart are dwelling.

When God called Lot and his family to come out of Sodom, Lot’s wife got her body out but she never got her heart out. Have you ever asked yourself the question, Am I totally out of Babylon? Or am I like Lot’s wife? My body is out of Babylon, but my heart is still there.

From Milk to Solid Food

What we have just studied is an elementary principle of the Bible. But we cannot always feed on the milk if we are going to grow up fully into Christ, and so I want to study, in the rest of this article, some deeper Bible principles which are necessary in order for us to understand the last two mother churches.

We have looked, so far, at the first mother church, Babylon, or the harlot church. The other two mother churches we find described in Paul’s letter to the Galatians. In Galatians 1:1, Paul makes it very clear that he is addressing his letter to the churches in Galatia. As Paul wrote this letter, he was in great agony of heart, because the churches were in a state of apostasy as the result of false teachers who had come in among them. Where did these false teachers came from? Did they come from Babylon, the center of the devil’s operation? No. They came from Jerusalem—the General Conference, or the world headquarters for the apostolic church.

In Galatians 4:8–16, Paul describes the apostasy these false teachers from Jerusalem had led the Galatians into. “But then, indeed, when you did not know God, you served those which by nature are not gods. But now after you have known God, or rather are known by God, how is it that you turn again to the weak and beggarly elements, to which you desire again to be in bondage? You observe days and months and seasons and years. [Some people try to use verse 10 against Seventh-day Adventists, but we do not qualify. We do not observe days, we only observe the seventh day Sabbath. Nor do we observe months or seasons or years in Historic Adventism.] I am afraid for you, lest I have labored for you in vain. Brethren, I urge you to become like me, for I became like you. You have not injured me at all. You know that because of physical infirmity I preached the gospel to you at the first. And my trial which was in my flesh you did not despise or reject, but you received me as an angel of God, even as Christ Jesus. What then was the blessing you enjoyed? For I bear you witness that, if possible, you would have plucked out your own eyes and given them to me. Have I therefore become your enemy because I tell you the truth?”

The very ones who Paul describes as leading the Galatians back to the “beggarly elements,” were teachers that came from the world headquarters of the apostolic church. The situation was so serious that Ellen White says the apostle Paul had to stand alone in opposition to the twelve disciples of Jesus—the twelve that were with Jesus when He walked among men. Paul even had to openly rebuke Peter because he was Judaizing. (See Galatians 2:11–14; The Acts of the Apostles, 199, 120.)

Can you imagine what a difficult situation it must have been for the Galatians, when leaders from Jerusalem, with the support of the disciples, began teaching that they had to keep the ceremonial law. Many must have thought, “These men must be right because they come from the disciples, the very men who walked and talked with Jesus. The apostle Paul, he must be speaking a dangerous doctrine!”

The situation was still more complicated because Paul was not dealing with the Jews here, he was dealing with Christians from the church at Jerusalem who were still keeping the ceremonial law, even though it had met its complete fulfillment in the death and resurrection of Christ. Paul continued: “They zealously court you, but for no good; yes, they want to exclude you, that you may be zealous for them. But it is good to be zealous in a good thing always, and not only when I am present with you. My little children, for whom I labor in birth again until Christ is formed in you. I would like to be present with you now and to change my tone; for I have doubts about you.” Galatians 4:17–20.

The Bondwomen and the Free

Now, notice his arguments starting in Verse 21: “Tell me, you who desire to be under the law, do you not hear the law? For it is written that Abraham had two sons: the one by a bondwoman, the other by a freewoman. But he who was of the bondwoman was born according to the flesh, and he of the freewoman through promise, which things are symbolic. For these are the two covenants: the one from Mount Sinai which gives birth to bondage, which is Hagar—for this Hagar is Mount Sinai in Arabia, and corresponds to Jerusalem which now is, and is in bondage with her children.” Galatians 4:21–25.

So Hagar, it clearly says, is a mother, for she is still in bondage with her children. So, who then does Paul use to represent the third mother church? “But the Jerusalem above is free. Which is the mother of us all. For it is written: Rejoice, O barren, you who do not bear! Break forth and shout, you who are not in labor! For the desolate has many more children than she who has a husband. Now we, brethren, as Isaac was, are children of promise. But, as he who was born according to the flesh persecuted him who was born according to the Spirit, even so it is now. Nevertheless, what does the Scripture say, Cast out the bondwoman and her son, for the son of the bondwoman shall not be heir with the son of the freewoman. So then, brethren, we are not children of the bondwoman but of the free. Stand fast therefore in the liberty by which Christ has made us free, and do not be entangled again with a yoke of bondage. Indeed I, Paul, say to you that if you become circumcised, Christ will profit you nothing. And I testify again to every man who becomes circumcised that he is a debtor to keep the whole law. You have become estranged from Christ, you who attempt to be justified by law; you have fallen from grace. For we through the Spirit eagerly wait for the hope of righteousness by faith. For in Christ Jesus neither circumcision nor uncircumcision avails anything, but faith working through love. And I, brethren, if I still preach circumcision, why do I still suffer persecution? Then the offense of the cross has ceased.” Galatians 4:26–31; 5:1–6, 11.

“As many as desire to make a good showing in the flesh, these would compel you to be circumcised, only that they may not suffer persecution for the cross of Christ. For not even those who are circumcised keep the law, but they desire to have you circumcised that they may boast of your flesh. But God forbid that I should boast except in the cross of our Lord Jesus Christ, by whom the world has been crucified to me, and I to the world. For in Christ Jesus neither circumcision nor uncircumcision avails anything, but a new creation.” Galatians 6:12–15.

Let us consider what Paul was facing. Here were these false teachers coming from Jerusalem. But they were not Jews, they were Christians who were speaking the sentiments of the disciples, and they were teaching that the ceremonial law still had to be kept. Why did they believe it still needed to be kept? Ellen White is very specific that they kept the ceremonial law, not so much because they believed in it any more, but because they wanted to avoid persecution. (Have you ever heard anyone say, “It is not time yet to distribute The Great Controversy”? That reflects the same kind of thinking as these early Christians had.)

Children in Bondage

Paul repeats over and over again that Hagar, this mother church, is in bondage with all of her children. What does he mean that they are in bondage? They are in bondage to sin. That is the main difference between the Old Covenant and the New Covenant. In the Old Covenant, a person had to come every year to the Most Holy Place for the Day of Atonement. Why did they have to come every year? Because they had not quit sinning. If you quit sinning, Paul says in Hebrews 10, then you would not have to come anymore.

In the New Covenant there is no Day of Atonement year after year after year. There is just one Day of Atonement period at the end of the world. Why, because a way has been opened that men do not need to keep sinning and confessing and sinning and confessing.

Did you notice that the people who are in Hagar’s church, who have the Old Covenant experience, want to avoid persecution so they are keeping the ceremonial law. But who are they actually persecuting in the process? Notice it says in Galatians 4:29, “He who was born according to the flesh then persecuted him who was born according to the spirit. Even so it is now.” Who were they persecuting? They were persecuting the true church. They professed to be the true church, but Hagar was their mother. They were still in the Old Covenant experience and they still had a yoke of bondage.

What is the yoke of bondage? The yoke of bondage is the law that you cannot keep. Theologians have tried to explain it by saying that the Jews made so many regulations that the people could not keep the law. (And that is true.) Other theologians have looked at the yoke of bondage and have said, “Well, the yoke of bondage is this ceremonial law.” However, when you look at the bottom line, all the evidence points to one thing: The yoke of bondage is a law that you cannot keep. But when you come to Jesus, friend, you are set free and then you can keep this law—the Ten Commandments. You are free. You have been made free and you do not have to be entangled again with the yoke of bondage.

There is another identifying mark that differentiates between the two mother churches. One is born according to the flesh and the other is born according to the promise or according to the Spirit. All throughout Paul’s writings these two antithesis are presented. For example, Galatians 5:16–18. “I say then: Walk in the Spirit and you shall not fulfill the lusts of the flesh. For the flesh lusts against the Spirit, and the Spirit against the flesh; and these are contrary to one another, so that you do not do the things that you wish. But if you are led by the Spirit, you are not under the law.”

The Children of Promise

We have now looked at Hagar, the second mother church, let us now turn our attention to the third mother church represented by Sarah and by the New Jerusalem. Here are the identifying marks. (You can find all of these right in the book of Galatians.)

This church is born free. The first time we are born, we are all born in sin, and thus sons of the devil. 1 John 3:8. However, Jesus told Nicodemus, If you want to go to the kingdom of heaven, you must be born again. And when you are born again, you are born free, your are born in the Spirit, not according to the flesh. This church is born free, that is, they are born again.

The headquarters of this church is in heaven, it is not in this world. It is not in Jerusalem, not in Takoma Park, not in Hagarstown. It is in heaven. That is what Paul says in Galatians 4:26: “But the Jerusalem above is free, which is the mother of us all.”

The children of the promise do not have an Old Covenant experience, they have a New Covenant experience. In the Old Covenant the conscience is never purged from sins, so you must keep coming back to the Sanctuary every year and have another Day of Atonement, but in the New Covenant you overcome sin and receive the victory over it.

In heaven, Jesus will not be serving as a Mediator or as your High Priest through all of eternity. No, that will all be over because all who go there will have overcome sin and will have no need of a Mediator anymore. In fact, God’s children, that live in this world during the time of trouble, are not going to have a Mediator. They will not need one because they will have overcome all sin. (See The Great Controversy, 425.)

These are the children of the promise, and their future is wonderful. But what will happen to Hagar’s spiritual children? They will be cast out and will not inherit the New Covenant promises. (See Galatians 4:30.) This is very serious. If Hagar is your mother, you are not going to heaven unless you receive the adoption of sons. You would be just as lost as if you were in Babylon.

Stand Up!

What was Paul’s instruction to the Galatian churches who were being brought into bondage? “Stand up in the freedom in which Christ has made you free.” And who were these people? They were just little independent churches scattered all over Asia and Europe. And they must have thought, “But we are just tiny groups and we do not have all the experience that the leaders back in Jerusalem have.” But Paul said, “Stand up! You are free and you must not allow these false teachers to lead you back into bondage again.”

I want to tell you, people have lost freedom in Adventism today. When I was a boy in Adventism, anyone was encouraged to go anywhere they could and start up a church. Now they want to close all the little churches down. They are afraid of anyone starting a church, because they are afraid it might not be under their control. What has happened to people’s thinking? Do you recognize that when people start to talk like that and think like that, they are not part of the church whose headquarters is in the New Jerusalem? Through Christ all are free, and all have been given the commission to take the gospel to every nation, kindred, tribe and people.

The apostle Paul knew that. He said, “We have hope of righteousness.” We expectantly wait for it. What is this righteousness? It is not a righteousness which you work out through certain religious rituals or political games. It is righteousness by faith—a faith that works through love. That is what counts in the sight of God.

What counts in your church, friend? Is it the equivalent of circumcision, religious rituals and political games, or is it faith that works by love? If your mother is the New Jerusalem, it is faith that works by love.

And what will we do if we are filled with this faith that works by love? Paul says, “Walk in the Spirit, and you shall not fulfill the lust of the flesh…But if you are led by the Spirit, you are not under the [condemnation] of the law.” Galatians 5:16, 18. If you are walking in the Spirit, overcoming the lusts of the flesh, you will also be bearing the fruits of the Spirit which Paul describes in Galatians 5:22, 23. You will become a new creation.

Who is the Israel of God? The Israel of God is not the children of Hagar who are in bondage to sin. I am not out to judge who is a member of what church but the fruit indicates that the great majority of Seventh-day Adventists, today, are children of Hagar, not Sarah. They are professors of Christianity, but everything in their system is down here in this world. They are in bondage. They have an Old Covenant experience. And not only that, they are persecuting the people who are seeking the New Covenant experience. They disfellowship them and get them out of their way. By the way, if you are persecuting people that do not think like you do on theology, that is absolute proof that your mother is Hagar. Anytime any person or any group of people decides they can disfellowship someone for non-Biblical reasons or stone them or take them to court or put them in jail or beat them up (all of those things have happened), that group of people does not belong to the New Jerusalem church. Hagar is their mother.

But the people, whose mother is the New Jerusalem, are born free. Their headquarters is not down here in this world. They have leaders and are organized, but their headquarters is not really down here. Their headquarters is in heaven. They are children of the promise. They stand in freedom and they hope for righteousness from the Holy Spirit that the Lord will give to them. They live by faith that works through love.

Who is your mother? Is she over in Babylon? Or does she dwell in earthly Jerusalem? Or have you been born free? Are you walking according to the Spirit? Are you a child of the promise? Are you receiving a righteousness that is not woven in any earthly loom? Are you operating on the principle of faith that works by love? Are you manifesting the fruits of the Spirit? Are you a new creation? I invite you to ask the Lord to work out this miracle in your life.

3 How did Paul express his hope for these people? Hebrews 6:9.

“God positively enjoins upon all His followers a duty to bless others with their influence and means. . . . In doing for others, a sweet satisfaction will be experienced, an inward peace which will be a sufficient reward. When actuated by a high and noble desire to do others good, they will find true happiness in a faithful discharge of life’s manifold duties. This will bring more than an earthly reward; for every faithful, unselfish performance of duty is noticed by the angels and shines in the life record. In heaven none will think of self, nor seek their own pleasure; but all, from pure, genuine love, will seek the happiness of the heavenly beings around them. If we wish to enjoy heavenly society in the earth made new, we must be governed by heavenly principles here.” In Heavenly Places, 233.

“We do not mark out any precise line to be followed in diet; but we do say that in countries where there are fruits, grains, and nuts in abundance, flesh food is not the right food for God’s people. . . .

“We are not to make the use of flesh food a test of fellowship, but we should consider the influence that professed believers who use flesh foods have over others. . . . Will any who are ministers of the gospel, proclaiming the most solemn truth ever given to mortals, set an example in returning to the fleshpots of Egypt? Will those who are supported by the tithe from God’s storehouse permit themselves by self-indulgence to poison the life-giving current flowing through their veins?” Testimonies, vol. 9, 159, 160. “Milk, eggs, and butter should not be classed with flesh meat. In some cases the use of eggs is beneficial. The time has not come to say that the use of milk and eggs should be wholly discarded. There are poor families whose diet consists largely of bread and milk. They have little fruit and cannot afford to purchase the nut foods. In teaching health reform, as in all other gospel work, we are to meet the people where they are. Until we can teach them how to prepare health reform foods that are palatable, nourishing, and yet inexpensive, we are not at liberty to present the most advanced propositions regarding health reform diet.

Granola Bars

Mix together:

6 cups rolled oats

3/4 cup raw sunflower seeds, hulled

1/2 cup sesame seeds

1 cup almonds

3/4 cup pumpkin seeds

1/2 cup flaxseeds

1 1/4 teaspoons salt

In another bowl, mix together:

1 cup honey

1/2 cup olive oil

1 Tablespoon vanilla or 1/2 cup natural cane sugar

vanilla bean equivalent crystals (optional)

Combine moist ingredients with dry ingredients and mix well. Press onto sprayed cookie sheet (should be about 1/2 inch thick). Bake at 250 degrees for 1 hour. Cut into squares while warm or break apart into chunks after cooling.

Restoring the Temple – Proteins

Some, in abstaining from milk, eggs, and butter, have failed to supply the system with proper nourishment, and as a consequence have become weak and unable to work. Thus health reform is brought into disrepute. The work that we have tried to build up solidly is confused with strange things that God has not required, and the energies of the church are crippled. But God will interfere to prevent the results of these too-strenuous ideas. The gospel is to harmonize the sinful race. It is to bring the rich and poor together at the feet of Jesus.

“The time will come when we may have to discard some of the articles of diet we now use, such as milk and cream and eggs; but it is not necessary to bring upon ourselves perplexity by premature and extreme restrictions. Wait until the circumstances demand it, and the Lord prepares the way for it.” Counsels on Diet and Foods, 368.

Cheese Unfit for Food

“Cheese should never be introduced into the stomach. . . .

“Many a mother sets a table that is a snare to her family. Flesh meats, butter, cheese, rich pastry, spiced foods, and condiments are freely partaken of by both old and young. These things do their work in deranging the stomach, exciting the nerves, and enfeebling the intellect. The blood-making organs cannot convert such things into good blood. The grease cooked in the food renders it difficult of digestion. The effect of cheese is deleterious.” Ibid., 368, 369.

An Aftermath of Sin

“God gave our first parents the food He designed that the race should eat. It was contrary to His plan to have the life of any creature taken. There was to be no death in Eden. The fruit of the trees in the garden, was the food man’s wants required. God gave man no permission to eat animal food until after the flood. Everything had been destroyed upon which man could subsist, and therefore the Lord in their necessity gave Noah permission to eat of the clean animals which he had taken with him into the ark. But animal food was not the most healthful article of food for man.

“The people who lived before the flood ate animal food and gratified their lusts until their cup of iniquity was full, and God cleansed the earth of its moral pollution by a flood. Then the third dreadful curse rested upon the earth. The first curse was pronounced upon the posterity of Adam and upon the earth, because of disobedience. The second curse came upon the ground after Cain slew his brother Abel. The third most dreadful curse from God came upon the earth at the flood.

“After the flood the people ate largely of animal food. God saw that the ways of man were corrupt, and that he was disposed to exalt himself proudly against his Creator and to follow the inclinations of his own heart. And He permitted that long-lived race to eat animal food to shorten their sinful lives. Soon after the flood the race began to rapidly decrease in size, and in length of years.

Antediluvian Depravity

“The inhabitants of the Old World were intemperate in eating and drinking. They would have flesh meats, although God had given them no permission to eat animal food. They ate and drank to excess, and their depraved appetites knew no bounds. They gave themselves up to abominable idolatry. They became violent and ferocious, and so corrupt that God could bear with them no longer. Their cup of iniquity was full, and God cleansed the earth of its moral pollution by a flood. As men multiplied upon the face of the earth after the flood, they forgot God, and corrupted their ways before Him. Intemperance in every form increased to a great extent. . . .

Israel’s Failure and Spiritual Loss

“In choosing man’s food in Eden, the Lord showed what was the best diet; in the choice made for Israel, He taught the same lesson. He brought the Israelites out of Egypt, and undertook their training, that they might be a people for His own possession. Through them He desired to bless and teach the world. He provided them with the food best adapted for this purpose, not flesh, but manna, ‘the bread of heaven.’ [Psalm 105:40.] It was only because of their discontent and their murmurings for the fleshpots of Egypt that animal food was granted them, and this only for a short time. Its use brought disease and death to thousands. Yet the restriction to a nonflesh diet was never heartily accepted. It continued to be the cause of discontent and murmuring, open or secret, and it was not made permanent.

“Upon their settlement in Canaan, the Israelites were permitted the use of animal food, but under careful restrictions, which tended to lessen the evil results. The use of swine’s flesh was prohibited, as also of other animals and of birds and fish whose flesh was pronounced unclean. Of the meats permitted, the eating of the fat and the blood was strictly forbidden.

“Only such animals could be used for food as were in good condition. No creature that was torn, that had died of itself or from which the blood had not been carefully drained, could be used as food.

“By departing from the plan divinely appointed for their diet, the Israelites suffered great loss. They desired a flesh diet, and they reaped its results. They did not reach God’s ideal of character or fulfill His purpose. The Lord ‘gave them their request, but sent leanness into their soul.’ [Psalm 106:15.] They valued the earthly above the spiritual, and the sacred preeminence which was His purpose for them they did not attain.

Nonflesh Diet to Modify the Disposition

“The Lord plainly told His people that every blessing would come to them if they would keep His commandments, and be a peculiar people. He warned them through Moses in the wilderness, specifying that health would be the reward of obedience. The state of the mind has largely to do with the health of the body, and especially with the health of the digestive organs. As a general thing, the Lord did not provide His people with flesh meat in the desert, because He knew that the use of this diet would create disease and insubordination. In order to modify the disposition, and bring the higher powers of the mind into active exercise, He removed from them the flesh of dead animals. He gave them angels’ food, manna from heaven.” Ibid., 373–375.

Ellen G. White (1827–1915) wrote more than 5,000 periodical articles and 40 books during her lifetime. Today, including compilations from her 50,000 pages of manuscript, more than 100 titles are available in English. She is the most translated woman writer in the entire history of literature, and the most translated American author of either gender. Seventh-day Adventists believe that Mrs. White was appointed by God as a special messenger to draw the world’s attention to the Holy Scriptures and help prepare people for Christ’s second advent.

Restoring the Temple – Is Milk Necessary? Part I

In much of Westernized society, the concept that milk (cow’s milk) is necessary for strong bones is widespread. From early in life, children are encouraged to drink their milk by well-meaning parents who have been taught that milk is the ideal food from which to obtain calcium for growing and maintaining healthy bones and teeth. As a child grows into a teenager, he or she is further taught that milk is necessary if a young person wants to grow tall and excel in sports or any other activity of choice. Then, in adulthood, this person is encouraged to continue drinking milk to make sure of maintaining those strong bones, and, especially if that person is a female, she is told that she must drink milk in order to avoid getting osteoporosis later in life.

However, is all of this true? Is milk the miracle food for bones? In this article we will look at these issues, as well as take a much broader view of the subject of bone health.

“Got Milk?”

The National Milk Mustache “Got Milk?” campaign and website target young people, and the public in general, in an effort to convince them that milk is absolutely necessary for a healthy diet. Actors and sports stars are shown with milk mustaches along with their comments about how important milk is to them and their performance. Nutritional information is provided, particularly about calcium, and it is stated that three glasses of any kind of milk will give your body the calcium it needs. The website even states that milk is a better choice compared to soda pop, sports drinks, and many juices.(1)

However, since this campaign is “funded by America’s milk processors” and they believe that “America finds itself in a calcium crisis today because consumers aren’t drinking enough milk,”(1) it may be wise to look to some other potentially less biased sources of information that do not have something to gain through increased sales of milk.

Studies are mixed as to whether or not dairy supports bone health and will prevent osteoporosis. In one study which measured the BMD (bone mineral density) of 745 men and women more than 60 years old, higher dairy product consumption was associated with greater hip BMD in the men, but not in the women. However, calcium supplementation protected both men and women from bone loss in those whose dairy intake was low.(2) In a review of 57 studies of the effects of dairy foods on bone health, 53 percent were not significant, 42 percent were favorable, and 5 percent were unfavorable. Of 21 stronger-evidence studies, 57 percent were not significant, 29 percent were favorable, and 14 percent were unfavorable.(3)

The Big Picture

The status of bone health is not limited to how much dairy a person consumes. Generally, the underlying premise that increased milk consumption will strengthen bones is based upon the fact that bones contain a high percentage of calcium (the biggest reservoir of calcium in the body), and that the more calcium you consume the more likely your bones will be strong. And since milk contains fairly large amounts of calcium, all you need to do is to drink your milk, and your bones will be fine. However, this is a very narrow view of bone health.

There are a variety of other factors that influence bone health, and when these are taken into consideration, milk is no longer the miracle food for bones and, at best, is unessential and, at worse, a detriment to bone health. In addition to calcium, bone formation is also dependent upon vitamin D, vitamin C, vitamin K, and phosphorus. Other factors include increasing calcium absorption, minimizing calcium loss from the bones, minimizing calcium loss from the body, and promoting bone strength through other healthy means.(4)

Milk and dairy products are the best known sources of calcium, but they are not the only foods that contain good amounts of calcium. Other sources of calcium are green and leafy vegetables, such as broccoli, kale, mustard greens, and turnip greens, sesame seeds, almonds, soymilk, calcium-set tofu, and beans, such as pinto beans, black-eyed peas, and navy beans.

Many people think that just because they eat or drink a food with lots of calcium that all of the calcium ingested will contribute to strong bones. However, this is not the case. All sources of calcium have various calcium absorption percentage rates. For instance, the calcium absorption rate for milk is about 32 percent. That means that if you drink one cup of 2 percent milk with 297 mg. of calcium, only about 95 mg. of calcium is actually absorbed into your bloodstream for use in your bones. However, the absorption rate for many green vegetables is 50 percent or even more, as is the case with broccoli at almost 53 percent and mustard greens at almost 58 percent.(5) Along with these plant foods come cancer fighting phytochemicals and fiber; they are low in hypertensive sodium and artery clogging saturated fat, and have no heart disease promoting cholesterol. Milk does not have all of these benefits!

Another important consideration is that as calcium consumption increases, calcium absorption decreases. Thus, just throwing more calcium at your body does not automatically mean stronger bones. Reducing calcium loss from the bones and ultimately from the body is very important. Without minimizing calcium loss, merely consuming more calcium is like trying to fill a bucket with water that has a hole leaking out a similar amount of water to the amount being poured in.

A high intake of acid-forming foods, high intake of sodium, and low intake of potassium all contribute to calcium loss from the bones and the body. Acid-forming foods increase the acid load in the body, and the body responds by releasing calcium, which is alkaline and will neutralize the acid, from the bones. The foods that increase the acid load most significantly are all meats, fish, cheese, and eggs. These items are also low in calcium, so the resulting calcium balance is much lower, meaning that there is less calcium in the body than before these foods were eaten. Milk also increases the acid load, but since it also supplies calcium, the resulting negative calcium balance in the body is not so great. Some grains, particularly refined grains, are also acid-forming, but not as much as animal foods. However, fruits and vegetables positively affect the body’s calcium balance and minimize calcium losses. Thus, even though plant foods appear on nutritional charts to have less calcium per serving, the calcium that is consumed from them is much more effective in maintaining positive calcium levels in the body, and the net result is positive instead of negative. Again, milk is not able to out-perform plant foods for bone health.(6)

Sodium also increases calcium excretion through the kidneys. Studies show that when sodium is reduced from the high levels common in some diets, the effect on bone density is similar to consuming approximately 890 mg. of calcium. A plant-based diet focusing on whole grains and unrefined foods has a significantly lower amount of sodium, since it is estimated that approximately 75 percent of the average salt intake is due to what was added during processing and manufacturing. Many dairy products and most processed meats are very high in sodium.(7)

Because of the reduced calcium excretion rates accompanying a diet low in animal protein and sodium, it is easy to understand why the World Health Organization recommends only 400–600 mg. of calcium per day. Most of the rest of the world does not eat the large quantities of animal protein and salt that people eat in Westernized countries.

Also important for bone formation is vitamin D. Vitamin D stimulates calcium absorption and bone formation, and decreases calcium excretion. Vitamin D is formed in our skin upon exposure to sunlight. Sufficient sunlight can satisfy our vitamin D requirements, and this is the best way to get vitamin D in the body. While vitamin D may be found in some fish and eggs or is added to milk, animal protein inhibits the body from being able to use it, due to the acid-forming nature of these foods. Studies show that season and latitude (how far north or south a person lives) affect vitamin D levels in the body. Levels were higher in the summer and higher the farther south a person lived. It is estimated that 10 to 15 minutes of sun exposure on the face and hands three times per week provide enough vitamin D for an adult, with the elderly requiring longer exposure and dark-skinned people needing as much as six times the exposure. It is important that a person takes advantage of the sun in the summer, as studies show that vitamin D levels during the following winter are determined by the previous summer’s sun exposure.(8)

Vitamin K, which is found in large quantities in green leafy vegetables, has been shown to significantly reduce calcium excretion in postmenopausal women, especially those not on hormone replacement therapy. This vitamin apparently works synergistically with calcium and vitamin D in their beneficial effects on bone health. Vitamin C, which is found in abundance in fruits and vegetables, especially peppers, broccoli, tomatoes, and oranges, is important for the formation of the collagen framework in the bones. Other important minerals are potassium and magnesium, which are found in good quantities in plant foods. Phosphorus is also needed for bone formation, but not too much of it; otherwise it will have a negative effect. Plant foods, especially fruits and vegetables, contain appropriate levels of phosphorus for good calcium absorption, while liver, chicken, beef, pork, and fish contain levels of phosphorus that hinder calcium absorption. Thus we continue to see that eating our fresh fruits and vegetables is very important for healthy bones.(4, 9, 10) Milk is not able to supply all of these important nutrients for bones at optimal levels.

Other Considerations for Building Strong Bones

Exercise is very important for strong bones. It is the concept of “If you don’t use it, you lose it.” If you do not give your bones a workout through physical exercise, they are not stimulated to build up bone density. In fact, the level of physical activity engaged in while a teenager can have significant beneficial effects on bone density later in life. In one study of women 45 years and older, those who exercised four or more times per week as teenagers were only a quarter as likely to have a hip fracture compared to those who exercised once a week or not at all.(11)

Some studies have suggested that estrogen helps maintain a positive calcium balance. However, in his clinical work, the late Dr. John Lee discovered that it is the addition of natural progesterone, along with a good diet and exercise, which actually increases BMD. His tests showed that women with the lowest bone densities experienced the greatest increase of bone densities when they used his program of natural progesterone, good diet, and exercise, even though some had already lost as much as five inches in height due to osteoporosis. Thus, it appears that estrogen only temporarily retards bone loss, but natural progesterone administered transdermally actually reverses bone loss.(12)

Most people do not see water as an essential nutrient; however, Dr. F. Batmanghelidj sees it as a preventative for many chronic problems, including osteoporosis. He believes that chronic dehydration, brought about by simply not drinking enough water and by the use of diuretics, such as coffee and other caffeine containing foods and beverages, is a major cause of this disease. The solution is to daily drink one-half ounce of water for every pound of body weight.(13) Considering the large quantities of caffeine that are consumed in the United States (which should be eliminated for a bone healthy lifestyle anyway) and insufficient water intake by most people, he may really be on to something very important.

Other important considerations for building strong bones include Omega-3 fatty acids (1–2 teaspoons of flaxseed oil daily) in the diet, as well as good sources of beta-carotene, which include carrots, pumpkin, sweet potatoes, dark green leafy vegetables, and red peppers. Proanthocyanidins and anthocyanidins, found in deep red-blue berries such as blackberries, blueberries, cherries, and raspberries, have the ability to stabilize the collagen matrix.(14) Inclusion of these items in the diet or supplementing with grapeseed extract may be an important aspect of an osteoporosis prevention program. MSM supplementation may also hold promise for supporting the connective tissue matrix of bones. While animal protein has a negative effect on calcium balance, particularly due to the increased acid load, studies do show that a sufficient (but not excessive) intake of protein is necessary for bone health. Again, plant sources of protein best suit this need.(4) Of course, smoking and alcohol should be eliminated, as these items also induce a negative calcium balance.

Conclusion

The issue of healthy bones is a complex one that includes a variety of diet and lifestyle factors. The assertion that milk is the solution to the osteoporosis and bone health problem ignores all the other important aspects of bone health except calcium. It is important to realize that milk is not the only food containing calcium, and instead there are other dietary sources from which the calcium is better utilized by the body. These sources are plant based, with fruits and vegetables needing to be emphasized. Legumes are also important, as they provide both calcium and protein. Animal foods need to be eliminated because of the acid load they bring to the body, along with the problems of saturated fats, cholesterol, and lack of fiber.

A review of studies dealing with bone health shows that vegetarians have a normal bone mass. Researchers would like to determine which aspects of a vegetarian diet contribute to bone health.(15) However, it may be concluded in the end that it is the synergistic effects of a good plant based diet along with healthy lifestyle factors. Certainly, a bone healthy program should include many, if not all, of the factors discussed above.

Children’s Story – A Glass of Milk

One day a poor boy, who was selling goods from door to door to pay his way through school, found he had only one thin dime left, and he was hungry. He decided he would ask for a meal at the next house. However, when a lovely young woman opened the door, he lost his nerve and instead of asking for a meal, he asked for a drink of water.

The young lady thought that he looked hungry, so she brought him a large glass of milk instead. He drank it very slowly, and then asked, “How much do I owe you?”

“You do not owe me anything,” she replied. “Mother has taught us to never accept pay for a kindness done.”

“Then I thank you, from the bottom of my heart,” he said.

As Howard Kelly left that house, he not only felt stronger physically, but his faith in God and man was also strengthened. He had been ready to give up and quit, but was given the courage to go on.

Years later that young woman became critically ill. The local doctors were baffled, and they finally sent her to the big city where they called in specialists to study her rare disease. Dr. Howard Kelly was called in for consultation.

When he heard the name of the town she came from, a strange light filled his eyes. Immediately he rose and went down the hall of the hospital to her room. Dressed in his doctor’s gown, he bent over to look at her, and he recognized her at once. He returned to his office determined to do his best to save her life.

From that day on he gave special attention to the case, and after a long struggle, the battle was won. On the day that his patient was to be discharged from the hospital, Dr. Kelly requested the business office to pass the final bill to him for approval. He looked it over, then wrote something on the edge of the bill and sent it to her room. She was afraid to open it, for she was sure it would take the rest of her life to pay for such a long and expensive hospital stay as hers had been. Finally she could endure the suspense no longer, and she opened the bill. Something scribbled in the margin caught her eye, and she read these words: “Paid in full with one glass of milk.” And it was signed by Dr. Howard Kelly.

Tears of joy flooded her eyes as her happy heart prayed, “Thank You, God, that Your love has spread abroad through human hearts and hands.”

Each day as we pass through our humble lives, we never know when a kind touch, a word of encouragement and cheer or a humble act of generosity might give a discouraged, hurting human being just the lift that will make the difference in his or her life. Restoring the Temple: Physiology of Digestion

Respect paid to the proper treatment of the stomach will be rewarded in clearness of thought and strength of mind. Your digestive organs will not be prematurely worn out to testify against you. We are to show that we appreciate our God-given intelligence by eating and studying and working wisely. . . . We are to appreciate the light God has given on health reform, by word and practice reflecting clear light to others upon this subject.” Counsels on Diet and Foods, 101.

“God holds you responsible to obey the light He has given you on health reform.” Ibid., 102.

Clogs the Machinery

“You indulge your appetite by eating more food than your system can convert into good blood. It is sin to be intemperate in the quantity of food eaten, even if the quality is unobjectionable. Many feel that if they do not eat meat and the grosser articles of food, they may eat of simple food until they cannot well eat more. This is a mistake. Many professed health reformers are nothing less than gluttons. They lay upon the digestive organs so great a burden that the vitality of the system is exhausted in the effort to dispose of it. It also has a depressing influence upon the intellect; for the brain nerve power is called upon to assist the stomach in its work.

“Overeating, even of the simplest food, benumbs the sensitive nerves of the brain, and weakens its vitality. Overeating has a worse effect upon the system than overworking; the energies of the soul are more effectually prostrated by intemperate eating than by intemperate working.

“The digestive organs should never be burdened with a quantity or quality of food which it will tax the system to appropriate. All that is taken into the stomach, above what the system can use to convert into good blood, clogs the machinery; for it cannot be made into either flesh or blood, and its presence burdens the liver, and produces a morbid condition of the system.” Ibid., 102, 103.

Digestion Aided by Moderate Exercise

“Exercise is important to digestion, and to a healthy condition of body and mind. You need physical exercise. . . . Healthy, active exercise is what you need. This will invigorate the mind. Neither study nor violent exercise should be engaged in immediately after a full meal; this would be a violation of the laws of the system. Immediately after eating there is a strong draft upon the nervous energy. The brain force is called into active exercise to assist the stomach; therefore, when the mind or body is taxed heavily after eating, the process of digestion is hindered.” Ibid., 103.

Aided by Pure Air

“The influence of pure, fresh air is to cause the blood to circulate healthfully through the system. It refreshes the body, and tends to render it strong and healthy, while at the same time its influence is decidedly felt upon the mind, imparting a degree of composure and serenity. It excites the appetite, and renders the digestion of food more perfect, and induces sound and sweet sleep.” Ibid., 104.

Avoid Very Hot or Cold Food

“The stomach is greatly injured by a large quantity of hot food and hot drink. Thus the throat and digestive organs, and through them the other organs of the body, are enfeebled. . . .

“Food should not be eaten very hot or very cold. If food is cold, the vital force of the stomach is drawn upon in order to warm it before digestion can take place. Cold drinks are injurious for the same reason; while the free use of hot drinks is debilitating. . . .

“Many make a mistake in drinking cold water with their meals. Food should not be washed down. Taken with meals, water diminishes the flow of saliva; and the colder the water, the greater the injury to the stomach. Ice water or ice lemonade, taken with meals, will arrest digestion until the system has imparted sufficient warmth to the stomach to enable it to take up its work again. Masticate slowly, and allow the saliva to mingle with the food.

“The more liquid there is taken into the stomach with the meals, the more difficult it is for the food to digest; for the liquid must first be absorbed.” Ibid., 106.

Caution to Busy People

“Take time to eat, and do not crowd into the stomach a great variety of foods at one meal. To eat hurriedly of several kinds of food at a meal is a serious mistake.

“In order to secure healthy digestion, food should be eaten slowly.” Ibid., 107.

Limit Variety

“For those who can use them, good vegetables, prepared in a healthful manner, are better than soft mushes or porridge. Fruits used with thoroughly cooked bread two or three days old will be more healthful than fresh bread. This, with slow and thorough mastication, will furnish all that the system requires.” Ibid., 108.

“Do not have too great a variety at a meal; three or four dishes are a plenty. At the next meal you can have a change. . . .

“There should not be many kinds at any one meal, but all meals should not be composed of the same kinds of food without variation. Food should be prepared with simplicity, yet with a nicety which will invite the appetite.” Ibid., 109, 110.

War in the Stomach

“Disturbance is created by improper combinations of food; fermentation sets in; the blood is contaminated and the brain confused.” Ibid., 110.

“It is impossible for the brain to do its best work when the digestive powers are abused. Many eat hurriedly of various kinds of food, which set up a war in the stomach, and thus confuse the brain. . . .

“When fruit and bread, together with a variety of other foods that do not agree, are crowded into the stomach at one meal, what can we expect but that a disturbance will be created?” Ibid., 111.

Fruits and Vegetables

“There should not be a great variety at any one meal, for this encourages overeating, and causes indigestion.

“It is not well to eat fruit and vegetables at the same meal. If the digestion is feeble, the use of both will often cause distress, and inability to put forth mental effort. It is better to have the fruit at one meal, and the vegetables at another.” Ibid., 112.

Sugar and Milk

“Far too much sugar is ordinarily used in food. Cakes, sweet puddings, pastries, jellies, jams, are active causes of indigestion. Especially harmful are the custards and puddings in which milk, eggs, and sugar are the chief ingredients. The free use of milk and sugar taken together should be avoided. . . .

“Sugar and the milk combined are liable to cause fermentation in the stomach, and are thus harmful.

“The less that condiments and desserts are placed upon our tables, the better it will be for all who partake of the food. All mixed and complicated foods are injurious to the health of human beings. Dumb animals would never eat such a mixture as is often placed in the human stomach. . . .” Ibid., 113.

Afflict the Stomach, Afflict the Soul

“If men and women would only remember how greatly they afflict the soul when they afflict the stomach, and how deeply Christ is dishonored when the stomach is abused, they would be brave and self-denying, giving the stomach opportunity to recover its healthy action. While sitting at the table we may do medical missionary work by eating and drinking to the glory of God.” Ibid., 111.

Is It Time to Give Up Milk?

Many years ago we understood that animal products like milk could be wholesome additions to our diet if used in small amounts at a time. As Seventh-day Adventists we also had read from the writings of Ellen G. While that we should anticipate a day to come that we could no longer do that with any assurance of safety. We were warned in 1902 “that the time will soon come when there will be no safety in using eggs, milk, cream, or butter, because disease in animals is increasing in proportion to the wickedness among men.” Counsels on Diets and Foods, 356. 1902 was a long time ago and the world is certainly more wicked than in that time. That day has come! The diseases in animals have become very widespread and so intense that they have begun to pose a serious threat to humans. Scientists have always proclaimed that it was impossible for many diseases to cross the specie lines from animals to man. It appears now that long held belief does not always hold true.

Diseases now are being transmitted across specie lines in two categories: prion diseases and retro-virus caused diseases. Prions still are not totally understood. We are not sure exactly how they act in transmitting disease but researchers have found positive correlations between their presence of the transmission of at least one disease; that of BSE (Bovine spongiform encephalopathy) in animals and the occurrence of CJD (Creutzfeld Jacob) disease in humans. BSE is more commonly known as the “mad cow disease.” Prions are simple protein molecules and how they could transmit disease is not yet understood. What is understood is that neither cooking or even pasteurization can kill or inactivate them. In fact, research has proven that they can survive 300 degrees centigrade for extended periods of time. This temperature would reduce the meat or milk to carbon or ash but the prion would still be quite intact! There is no safety in ingesting any form of animal products, even cheese and gelatin. The makers of gelatin maintain that they have so processed the animal product that it has now become a pure chemical and could not therefore cause disease. Those who have examined the technique they utilize in processing have seen that the prion can easily survive all six of their procedures.

A second category of disease transmission involves the retro-viruses. This new family of viruses poses an even greater danger to humans than even the prion. A retro-virus has the ability to incorporate itself in to one’s genetic makeup. That is to say that it actually becomes part of the host. The virus now becomes basically immune to all the weapons of the human immune system because the body does not recognize it as being foreign. The only way to totally eradicate the viruses is to kill it’s host! Lets avoid these viruses at all cost. Some of the diseases caused by retro viruses are HIV, BPV, BLV, and BIV. BPV or Bovine Papilloma Virus, a disease associated with cancerous tumors in cattle, has been isolated in commercially prepared milk available in retail outlets as long ago as 1979. It appears that as SDA’s we should have seen the light on discontinuing these food sources long ago. In the United States it is estimated that up to 80% of the commercial dairy herd may carry BLV or Bovine Leukemia Virus. This disease can be transmitted from the infected lymphocytes of a diseased animal since milk is made up largely from lymphocytes it seems very prudent to avoid milk at any cost. There is evidence that it is very possible for infected lymphocytes to cross the intestinal membrane barrier and enter the blood stream in a virulent state. Also there is no guarantee that the genetic information of the retros is deactivated by pasteurization. Even though the active virus may have been “killed” by the heat, the particle can still be absorbed by the intestines. It is entirely possible that the genetic information from the particle may still be incorporated into the human. It is estimated that 40% of the dairy herd may be infected with BIV or Bovine Immunodeficiency Virus. BIV is the Bovine counterpart of the human HIV, the virus that eventually turns into AIDS. One very startling discovery is that HIV and BIV have common genetic material: the “Trans-activating gene” or more commonly called a Ta T gene. The reason this is so frightening is that even though humans may not be susceptible directly to BIV, the BIV Ta T gene may be able to trans-activate or trigger latent HIV particles in the human and indirectly cause HIV in humans. Some medical researches feel that many more humans than is presently imagined are carrying either latent or deactivated HIV viral particles in their bodies that their immune system has been successful in controlling. With sufficient dietary “doses” of BIV infected foods, these latent particles have an excellent possibility of being activated and the human host developing a full blown case of AIDS. Tests with chimpanzees which have similar anatomical and physiological make up as humans have clearly demonstrated how real this possibility is.

These things may sound quite frightening, but we must remember that God so loves us that He gave us warnings in advance so that we would be able to avoid these diseases by simply not eating those things that are no longer safe. In Romans 1:17 we are told that “the just shall live by faith.” Those who survive the end times will have to be so full of faith in God’s wisdom that they will accept His directions for every aspect of life

Health – Cheese

Very few things are sacrosanct in this day, and cheese must now be classed among those things that have lost their halo. Cheese has been used for at least 4,000 years, and has been widely acclaimed as a healthful food. Some have claimed unusual hardiness and advanced old age for cheese users. Only recently has it been learned that cheese is not the wonder food that many had thought. There may be real dangers in its use.

All dairy products have become more suspect recently, from the association of the saturated fat of milk with the elevation of the blood cholesterol, to the transmission of many animal diseases to man through dairy products. Most of the diseases transmitted from animals are of a minor nature, resembling colds, flu, streptococcal sore throat, and other infections, but some diseases are life-threatening.

A battle is still going on with brucellosis, a disease contracted from milk which threatens the quality of life for many years, giving a chronic low grade fever and below par performance to the afflicted person. Between 1883 and 1947, there were 59 epidemics caused by cheese, with 117 deaths in the United States alone.

Now, cheese is under special attack, not because of infectious diseases which it shares with all dairy products, but because of its basic chemistry. Cheese is made by the action of waste products from molds and bacteria on milk. Most foods contaminated with molds and bacteria produce such an unpleasant flavor that few people care to eat them. Generally, an unpleasant flavor in food heralds danger, and apparently this principle holds true for cheese, since most children naturally reject their first taste of cheese and must be taught to accept it.

Changes which occur in cheese during the fermenting and “ripening” process include the production of a toxic alkaloid called roquefortine (as in Roquefort dressing), a neurotoxin which can cause mice to have convulsive seizures. All blue cheeses probably contain roquefortine. The alkaloid is produced by the mold Penicillium roqueforti. The alkaloids are all toxic and include such widely differing poisons as coniine, one of the major volatile alkaloids found in the poison hemlock plant from which Socrates met his Waterloo; to caffeine, the major alkaloid in coffee, tea, colas, and chocolate.

Another class of toxic substances includes the toxic amines. Any fermented food or beverage may contain toxic amines. They can produce changes in the nervous system which bring on headaches, palpitations, high blood pressure, migraines, and other known disorders which occur at a cellular level.

Several toxic and nontoxic amines are produced during the fermentation of milk, tyramine being among them, the amine causing migraine headaches. The only cheeses containing tyramine in insignificant amounts are creamed cheese, ricotta cheese, and cottage cheese. Some other foods containing tyramine are chocolate, herring, yeast, broad beans, chicken livers, ripened sausages (bologna, summer sausages, salami, pepperoni, etc.), meat extracts, and alcoholic beverages. If a human follows his natural taste he will avoid anything that has the faintest taint of spoilage about it.

Milk, produced by glands that are actually modified sweat glands, is naturally high in salt. Cheese shares in this high salt content. A high salt intake increases one’s likelihood of having high blood pressure.

The rennet for the curdling process in cheese making is commonly obtained from the stomachs of calves. A combination of rennin and pepsin is sometimes used, or plant enzymes derived from fungus. Pepsin is obtained principally from fresh hog stomachs. Many processed cheeses have preservatives, emulsifying agents, and other chemicals added to them, that can have a harmful effect on the body. The putrefactive process through which milk goes to produce cheese reduces the vitamin content. Cheese is almost completely devoid of water soluble vitamins. Losses of both vitamins and minerals occur with the loss of whey.

Undesirable chemicals are produced by cheesemaking that involve all three major constituents of cheese: fats, carbohydrates, and proteins. The fat in cheese is hydrolyzed to irritating fatty acids, butyric, caproic, caprylic and longer carbon-chain fatty acids. The carbohydrate of milk, mainly lactose is converted to lactic acid by putrefaction. The protein is fermented to peptides, amines, indoles, skatole, and ammonia, several of these being implicated in the production of cancer. The possibility of production of nitrosamine, one of the most powerful cancer producing agents known, is particularly disturbing. Both the nervous system and the gastrointestinal tract are irritated by certain of these substances, causing the individual to be irritable and cranky.

Of course, cheese also presents the usual drawbacks of milk such as allergies, lactose intolerance, food sensitivities, and high calorie content. Cheese contains a goodly quantity of the amino acid tryptophane, which causes after-meal drowsiness and inability to concentrate.

Certain imported cheeses have been discovered as culprits in outbreaks of food-borne gastroenteritis in the United States. As many as 120 disease-producing germs have been isolated per gram of cheese; that would be 600 germs in a teaspoon of cheese! We can say from the foregoing, that some foods generally thought to be wholesome are actually injurious to the health.

Other foods that develop a specific flavor through the activity of bacteria include sauerkraut, vinegar, pickles, butter, buttermilk, and cultured milk. The holes in Swiss cheese come from the action of gas forming bacilli, similar to those which form gas in the bowel.
